Spinach and Mushroom Pinwheels

Delicious! A bit of work since there are so many steps, but each step goes quickly. I added some crushed red pepper to the mushroom and spinach mixture since some other reviewers said it needed something else. All in all, a delicious, convenient (since you can make ahead) recipe.

Peach Cobbler I

I took the advice of another reviewer and used much less butter...it really doesn't need a whole stick of butter. It turned out wonderfully and everyone at the 4th of July barbeque loved it. When I make it again, I may make some adjustments to the topping. I prefer the peach flavor and the cinnamon was a little overpowering for my tastes.

Red, White, and Blueberry Cheesecake Pie

This was so easy and so tasty! I didn't have time to let the phyllo dough thaw, so I used a pre-made graham cracker crust instead and it turned out just fine. The hardest part was making the star on top of the pie!

Breaded Parmesan Chicken

Delicious! Simple to prepare, and although it takes some time to cook, it's well worth the wait. The second time I made this, I cut down on the Italian seasoning (by about 1/2) because my 9 year old daugter thought it was too much flavor and it was still good!

Spinach-Stuffed Flounder with Mushrooms and Feta

This was excellent and simple. I added 3 cloves of garlic to the spinach and mushroom mixture for some extra flavor...next time I will add more garlic and some salt and pepper. It's a great recipe, just needs a little more flavor.

Baked Pork Chops I

Although this is a little more involved than I like to get (with the frying and taking it out during baking to add sauce), it's quite tasty! I took the advice of others and cut the cooking time to 1/2 hour before the sauce and 1/2 hour after. It's plenty.

Chicken Marsala

This was easy and delicious. I took the advice of several others and used 1/2 the oil and butter; added lots more mushrooms, using portabello and white mushrooms; added 1/2 cup of chicken broth thickened with cornstarch to thicken the sauce some. I planned to add a few cloves of garlic as some others suggested, but forgot until everything was simmering, so I added a few pinches of garlic powder instead. I served it with Bella Rosemary Red Potatoes (a recipe from this site) and broccoli. Everyone loved it!

Shrimp and Feta Cheese Pasta

This was delicious! I took the advice of others and added less pasta (too litte actually...probably 3/4 lb. would be perfect), more tomatoes, more shrimp and also added black olives. Next time I make this, I am going to add fresh spinach and scallops.
