Pretty Chicken Marinade

I've made this several times and family likes it. I DO NOT EVER EVER USE Liquid Smoke. I cook this over charcoal and hickory wood to get the smoked flavor. I have always found Liquid Smoke too overpowering. I also think that using 2/3 cup olive oil and 2/3 cup of low sodium soy sauce is wasteful. I use 1/3 olive oil and 1/3 low sodium soy. I really don't measure the garlic powder and pepper, I just eyeball it. Squeeze some spicy brown mustard into and mix. Coat the chicken with it in a bowl, cover and refrigerate. I put the lemon in right before I grill it. This is a good tenderizing marinade.

Beef Barley Vegetable Soup

Cooked on the stove. Totally awesome! The chuck roast yielded an awesome broth. Very seldom do I rate a recipe as 5 star but this was one of those times.

Shrimp Scampi V

Fixed for my wife on Valentines Day. This recipe turned out great. I only wish I knew a better white wine use for this recipe. The wine I used was a sauvignon blanc which I suspect was not dry enough. It still turned out good but the wine was sort of overpowering. It really did not reduce enough so I ended up with too much liquid. I will fix this again but I will cut back on the amount of wine and try to find one that is drier.

Beef Tips

This is a great crock pot recipe! I tweaked it just a little(did not need the oil because I used my crock pot). This cooked for about 2 to 3 hours and the smell was wonderful. I used fresh garlic instead of garlic powder, I wanted a thicker gravy so about 20 minutes before I served it I took about a cup of the liquid from the pot and stirred in about 2 tablespoons of Argo corn starch until lumps were gone. Then poured the mixture back into the pot. This thickened the broth into a fantastic gravy which was perfect on white rice. I promise you this is delicious! Served with french bread and a tossed salad. This one is definitely a keeper and I will make it again.

Mom's Meat Loaf

Bolognese Sauce

It will be 5 star next time I make it. It was absolutely delicious. I had one problem and that was with the bacon, onion, and garlic. Problem was that even on medium heat the garlic and onion cooked up way faster than the bacon. So next time I am gonna get the bacon started a few minutes before I add the onion and garlic. I am thinking of using pancetta instead of the bacon as well. In place of the ground pork I used ground sweet/mild Italian sausage which was good. This sauce was good served over linguini. Very good! We loved it!
