About this Cook
My mom taught me how to cook. She learned from my grandmother. That side of my family is from eastern Tennesee and western North Carolina. Needless to say, I was raised on fried chicken, fried pork chops, country style steak, beans, buscuits and cornbread, yea the good stuff!!! To support myself in college I cooked at a number of restaurants (Victoria Station, O'Brians, White Horse, Bennigans, Olive Garden etc.) So, I have picked up a few things along the way.
My favorite things to cook
I like cooking pork bbq, chicken wings and ribs over hickory. Also like doing low country boils with shrimp and crab legs. In colder winter I like cooking stews and Italian.

Used to smoke 8 to 10 Boston Butts every summer for our family reunions.

Chinese Pepper Steak
This was delicious! Very easy and fast to prepare. I added mushrooms which were perfect for this dish. Used 1 1/2 lbs of top sirloin and there was plenty of marinade to go around. This will become a regular menu item for us especially when the weather prevents us from grilling.

Pretty Chicken Marinade
I've made this several times and family likes it. I DO NOT EVER EVER USE Liquid Smoke. I cook this over charcoal and hickory wood to get the smoked flavor. I have always found Liquid Smoke too overpowering. I also think that using 2/3 cup olive oil and 2/3 cup of low sodium soy sauce is wasteful. I use 1/3 olive oil and 1/3 low sodium soy. I really don't measure the garlic powder and pepper, I just eyeball it. Squeeze some spicy brown mustard into and mix. Coat the chicken with it in a bowl, cover and refrigerate. I put the lemon in right before I grill it. This is a good tenderizing marinade.
