Creamy Rice Pudding

My wife eats a package or two of store bought rice pudding every week and was reluctant to let me make something from scratch that is so easy to buy from the store. But when I made this she became a homemade rice pudding convert. She says it is the closest she has ever had to what her grandma used to make when she was little.

Homemade Mac and Cheese

It wasn't bad, but it was just kind of plain. Next time I think I'll add some cooked onions and maybe some jalapenos to liven it up a bit.

Beef Tips and Noodles

This is actually really good for such a simple recipe. My ways that I deviated were that I used a 12 inch dutch oven instead of a 9x13 dish, and coated the beef chunks in flour and browned them in a little bit of bacon grease before adding the rest of the ingredients. I put the lid on the dutch oven then stuck it inside the regular (braising) oven at 400 for an hour like the instructions say. They came out perfectly tender and juicy! Then to go with it I had an oatmeal stout beer, Slow Elk oatmeal stout from Big Sky Brewing to be specific, and it paired amazingly with the food. I think next time I make this recipe I might actually use a stout beer instead of water for the liquid in the recipe.

Baked Lemon-Basil Pasta

I made this the other night and it was good, but I will make some changes next time. First thing I would change would be to use more chicken. Maybe I got a smaller chicken breast, but there wasn't much there and I think I would use the whole thing instead of half next time. Next is the lemon, half the juice is plenty and there is no need to drizzle the remaining lemon juice in step 5. Also, I'm a garlic fan so two cloves was not enough for my taste. The only other thing I would add would be some diced onion with the wine and sour cream mixture, and maybe some capers too.
