Baked Pancakes

Great basic recipe. I used white whole wheat flour and it came out great, though it only needed to cook for about 15 minutes. Next time, I will cut the butter to 1 1/2 - 2 tablespoons and try honey instead of sugar. I might also try adding cinnamon and vanilla. Update: 2 tablespoons butter, honey instead of sugar, and the addition of cinnamon and vanilla worked great!

Sweet and Savory Kale

Broccoli Chicken Divan

I was surprised at how good this was. I made it ahead and kept it in the freezer to eat on a busy night. It was a hit! I used much less than the 1 pound of broccoli called for, though. The bread crumbs were soggy -- I may just skip them next time

Sugar and Spice Cookies

Great flavor! I made these with a Mickey Mouse cutter for a surprise snack on our recent visit to Disney World. They went very quickly. I will definitely make them again -- though I will make them thicker next time. The 1/8" recommended in the directions made the cookie too thin and crisp for me.

Brownies with Peanut Butter Fudge Frosting

I poured the frosting on the brownies when they were still just a bit warm and put it in the fridge for about an hour. It was a gooey mess, the flavor was bland, and it was overly sweet (and I am a sweets person -- I didn't think anything could be "overly sweet"). I refrigerated overnight and tried again in the morning. The consistency was much better (less gooey) and the flavor seemed slightly better, however, now the brownie was cold. As they returned to room temperature, the gooeyness returned. This frosting is not for me. If you enjoy your brownies cold and enjoy a very sweet frosting, this may be perfect for you!

Brown Sugar Meatloaf

Very good recipe! I also put the sugar/ketchup mixture on the top -- the idea of it sitting in the fat at the bottom of the pan skeeved me out. I used bread crumbs instead of crackers because that's what I had. Also, I put stale bread at the bottom of the pan to absorb some of the fat. That worked great!

Fudge-Nut Oatmeal Bars

These were very popular at the 2 places I brought them. I have already been requested to make them again for a future function. I will leave out the walnuts next time because I think the fudge would be better smooth since the oatmeal provided so much texture. They were better the second day than the day I baked them, so plan to make them ahead

Scones

Great recipe! I used 1 tbs of baking powder and added milk as needed (probably used a little more than 3/4 cup). Instead of rolling and cutting the dough, I used a large ice cream scoop and scooped them right onto a cookie sheet. They came out great! I added chocolate chips this time, can't wait to try them again with something different. The possibilities are endless...

Slow Cooker Homemade Beans

Not bad. I soaked the beans overnight and then simmered for about an hour. Cooked in slow cooker overnight. The bean were cooked, but not mushy -- perfect. My issue is with the sauce. It was ok, but tasted like ketchup. Next time, I will try a recipe that doesn't use ketchup as a base.

Wheat Germ Whole-Wheat Buttermilk Pancakes

This has become my standard pancake recipe. Even family members who wouldn't eat them if they knew they contained wheat germ and whole wheat flour thought they were great. I double (or triple) the recipe and mix all the dry ingredients ( using buttermilk powder instead of buttermilk) together ahead of time and keep the mix in the fridge. Only having to add the wet ingredients at breakfast time makes this just as easy as a store bought mix, but healthier and better tasting. (I use much less oil than the recipe calls for -- probably only a couple teaspoons. I tried it the first time with the recommended oil and the pancakes were way too "moist" and greasy.)

Baked Oatmeal Squares

I used a small banana instead of the oil and used a mini muffin pan. They taste great and are firm enough to eat without a fork. Will be a healthy snack to bring to work this week.

Blueberry Buckle

This was fantastic! I even had to swap out the butter for a dairy/soy free substitute and used water instead of milk (due to a dairy/soy allergy of someone who was at the event) and everyone still agreed it was great. I cannot wait to make it using butter and milk -- I'm sure it will be even better (though I'm not sure that's possible).
