Butternut Squash Pizzas with Rosemary

I've had very similar to this before and it was great! The way I've had it also includes using regular pizza sauce, topping with the onions and squash as described and then putting dollops of goat cheese instead of the listed cheese(s) and then topping with some shredded mozzerella.

Sweet Potato Pie I

This was quite good. First time I ever had sweet potato pie before. We'll definitely make it again. We used a bit less sugar (about 2/3rds cup) but otherwise followed the recipie almost exactly.

Creamy Blueberry Pie

This was quite good. About the only change I would make is a bit less sugar and butter, but that reflects our tastes. It should be fairly easy to swap the blueberries with another fruit too for a variety.

Alaskan Salmon Chowder

Very good. We used smoked packaged salmon and no green pepper, otherwise followed it pretty much as listed. Will definitely make it again. Considering half and half or cream in place of the milk and smoked trout or some other smoked fish.

Awesome Eggplant Rollatine

Very good and rich. I used a madolin to make the eggplant slices and it worked well, but after cooking most of their taste was gone due to the thiness. Using a knife for a little thicker slice would easily solve this. We'll definitely make it again. A sweeter sauce, like a tomato basil, works well.

Fruit Pizza II

Made this as listed and added kiwi, blueberries and banana slices to the stawberries. It worked really well and was liked by all who tried it. Used a retangular pan about 9 x 13 for the crust, cut the package of dough into three layers (1/3 thickness of how it was packaged) and this fit almost perfectly. Cooked the dough for 12 minutes as listed, might go a little longer (14-15 minutes) next time.

Pork Tenderloin with Creamy Herb Sauce

Dill Pickles

This is the first recipe we could find that actually resulted in crisp pickles. The spices need some adjusting for our taste but otherwise a good recipe.

Apple Filled Chicken in Pecan Creme Sauce

The chicken with the apples and cheese was great. The sauce never thickened and was way to sweet for us. We'd cut the sugar by at least half and maybe even more. We're going to experiment with some other sauces but the chicken half of the recipie deserves at least 4 stars.

Rempel Family Meatloaf

We enjoyed this. The cheese was little different from the more traditional meatloafs but in this case it helped the flavor even more.

Three Pepper Chicken

Fairly bland when made as is. The cracker crust started burning long before the chicken was fully cooked. We had to microwave it for a few minutes to get the center cooked. With a substantial amount of additional spice or flavor this could be a decent dish. We thought pineapple and soy for more of an asian flavor or lots of thyme for a more country flavor.

Turkey Pot Pie

The only change was green beans instead of celery and it came out great! An old Bakers Square pie pan couldn't quite hold all of the filling so I also filled a small (1 quart) glass bowl and topped with a little left over dough. It made for great leftovers the next day. For the crust we used Betty Crocker pre packaged 2 crust mix. It's in a red box.
