Tofu Parmigiana

I got this recipe and my wife surprised me with it for dinner that night. It was very good. We served it with steamed green beans and whole wheat garlic/parmesan toast. I will definately be cooking this again.

Black Bean Hummus

"This hummus is the biggest bomb ever", or so my 3 year old daughter says. I have to agree, it has the best parts of traditional hummus and black bean dip. I used Trader Joe's Cuban Black Beans which have some added flavor. I love this stuff... chomp chomp... very easy to eat.

Cinnamon Hazelnut Biscotti

Delicious recipe. I made eight batches of this for gift baskets on Christmas. Everyone said they were yummy... I added 1/2 cup Hershey's cinnamon chips with the hazelnuts in the food processor. They added a nice touch, but melt down enough so they're not like candy bits. Very good!

Baked Yam and Potato Casserole

This dish was a satisfying side dish. I made it for Thanksgiving dinner and it was a hit. I will make it for our Christmas dinner too. Very tender and yummy!

Vegetarian Gravy

This is easily the best gravy I have ever had. The flavor and consistancy are perfect, however I did add maybe 1/4 cup water to thin it a bit. No more "brown gravy" packs for us. I made it for Thanksgiving and will make it again for my carnivorous family for Christmas. They all love our "veggie" food once they try it. Yes there is life after meat...

Vegetarian Stuffing

This delicious dressing is full of flavor and texture. I used all optional ingredients and it was excellent. I watched my wife's eyes at first bite and they lit up! My 3 year old daughter liked it too. She especially liked the pine needles(wild rice). I'm making it for my carnivorous family for Christmas, I'm sure they'll love it.

Fresh Corn Spoon Bread

I used 2 cups milk, one cup half and half and one cup vanilla soy milk. This recipe is very good. It's a nice variation to cornbread or a casserole. It has a mild flavor, but is delicious. It is creamy and bakes up light and fluffy. My wife and 3 yr. old loved it. I will make this again, maybe with some sharp cheddar and sour cream...
