Stephanie's Freezer Spaghetti Sauce

I actually made this to have tonight, not necessarily freeze, although I love that idea! It was wonderful, perfectly flavorful. My whole house smelled amazing. I used canned tomatoes rather than fresh and closer to a whole green pepper. Due to time, I just did it all in a pan on the stovetop for about an hour. I'm excited to have leftovers, as I'm sure it will taste even better tomorrow! What a simple, great recipe.

Rosemary Ranch Chicken Kabobs

I actually make this with vegetarian chicken (Quorn chik'n tenders), and it is quickly becoming a favorite! For one bag of Quorn, I use only 1/4 c oil and 1/4 c ranch dressing (I guess mine is technically Ranch dip) and then the rest as noted. I mix everything up together in a bowl, add the "chik'n," then let it chill in the fridge for a few hours before I sautée it in the frying pan. I'm sure it would be delicious grilled, but I just haven't taken the time to do that yet.

Morning Glory Muffins I

These are absolutely wonderful! All the peeling and shredding is a lot of work but worth it to me. Luckily, my food processor helps with the shredding. I cut the sugar back to a little over 3/4 c and found them to still be extremely sweet. I will cut it back to 1/2 c next time, as I prefer more of the grainy taste. I used 1 c wheat flour and 1 c white and added 3 tbs of flaxseed meal to the batter. They are just so flavorful and fun.

Roasted Yam and Kale Salad

What an amazing combination of flavors! Like many reviewers, I served this warm rather than cold and added crumbled Gorgonzola at the end. I also used balsamic vinegar instead of red wine simply because that is what I had on hand. Wonderful!

Seminary Muffins

Like many reviewers, I used raisins rather than chocolate chips. I also used half wheat flour and half white. They came out great, maybe on the sweet side, but they are really great. I love the banana flavor and the heartiness of the oats.

Wonderful, wonderful way to sneak in some veggies! These are so easy and delicious. I usually have way more spinach mix than I need, though. Just an excuse to make a 2nd batch!

I look forward to making this several times each fall. I have followed the suggestions of others and halved the sugar and added in nutmeg. It is so flavorful and freezes beautifully.

Stuffed Pattypan Squash

This recipe was bursting with flavor! I actually used meatless bacon since we are vegetarians, but otherwise, followed the recipe exactly. I will definitely look forward to pattypan being in season again next year!

Sweet-Potato Muffins

I found this recipe when I was searching for a way to use up a surplus of sweet potatoes. I thought it sounded unusual and wasn't sure what to think, but my 2-year-old loves muffins, and I thought this would be a great way to sneak in some veggies. They were absolutely delicious, and so beautiful! I love sweets but actually think you could decrease the sugar in these a bit and still have a great flavor. So excited to have found this recipe. It will become a regular!

Winter Squash Rolls

Loved, loved, loved this recipe! I used roasted butternut and found I needed to add a lot more flour (maybe another 1 1/2 c), as the dough was very stick. I subbed 1/2 c wheat flour but hesitated to use much more for fear of them getting too heavy. Texture was perfect! I halved the recipe and still came out with 12 large rolls.

Hunts® Chicken with Mediterranean Vegetables

I really liked this recipe. I did add some seasoning, such as garlic, more rosemary, etc. I also served it over quinoa (made with veggie broth), which gave it more texture and adds fiber. I found the recipe to be barely enough for my family of 3. I will double it next time.
