Stephanie's Freezer Spaghetti Sauce
I actually made this to have tonight, not necessarily freeze, although I love that idea! It was wonderful, perfectly flavorful. My whole house smelled amazing. I used canned tomatoes rather than fresh and closer to a whole green pepper. Due to time, I just did it all in a pan on the stovetop for about an hour. I'm excited to have leftovers, as I'm sure it will taste even better tomorrow! What a simple, great recipe.

Rosemary Ranch Chicken Kabobs
I actually make this with vegetarian chicken (Quorn chik'n tenders), and it is quickly becoming a favorite! For one bag of Quorn, I use only 1/4 c oil and 1/4 c ranch dressing (I guess mine is technically Ranch dip) and then the rest as noted. I mix everything up together in a bowl, add the "chik'n," then let it chill in the fridge for a few hours before I sautée it in the frying pan. I'm sure it would be delicious grilled, but I just haven't taken the time to do that yet.

Morning Glory Muffins I
These are absolutely wonderful! All the peeling and shredding is a lot of work but worth it to me. Luckily, my food processor helps with the shredding. I cut the sugar back to a little over 3/4 c and found them to still be extremely sweet. I will cut it back to 1/2 c next time, as I prefer more of the grainy taste. I used 1 c wheat flour and 1 c white and added 3 tbs of flaxseed meal to the batter. They are just so flavorful and fun.
