Good Old Fashioned Pancakes
Wonderful!!! I ate these with margarine instead of butter but still didn't need syrup or anything else to top them off either. They were fluffy and moist, so incredibly perfect!

Quinoa and Black Beans
I have never tried quinoa before and I thought I would give this a try for me and my boyfriend. I didn't have any beans so skipped that part, and instead of using broth I used 2 cubes of chicken bullion and skipped the salt. We both LOVED it! It was flavorful and delicious, I just love the way some of the quinoa pearls pop in your mouth. We will defiantly be using this as a healthy alternative to rice and heavier meat dishes.

Tofu Burgers
I am currently moving to tofu and made this for me and my boyfriend. We love it. I used the baking method and had some variations: *Squeezed the water out of the tofu for 20 min between plates & paper towels *Then soaked the tofu in beef stock for 20min before crumbling into the baking pan *Sauteed green peppers instead of celery *Add fennel seed for a more meaty flavor *Add cumin, chili powder, and red pepper flakes to add spice(we like spicy) With the cheese and egg it will do well in the oven. Used 2 eggs instead of one to make it bind a little more.
