Baked Ziti with Sausage

Reviewed: May 29, 2012
Made few changes: didn't have sausage so used pepperoni, used sharp cheddar cheese and cottage cheese. These changes were yummy and the fam liked it.

Chocolate Cornstarch Pudding

Made this as a Valentine treat for the fam. Easy to make, thickened very nicely. Not an overpowering chocolate flavor - just right actually. Great chilled!

Charleston Breakfast Casserole

Reviewed: Dec. 24, 2011
Made this for our Christmas Eve Day brunch. Excellent choice! Used 8 eggs and added finely chopped portabellas and seasoned croutons. Put in the fridge overnight. Had great flavor. A keeper recipe.

Barbecued Beef

Reviewed: Dec. 22, 2011
This was great. We have many roasts in the freezer (I made with chuck roasts) and this was a great way to prepare them. I used balsamic vinegar - tasty. Thought I would have enough to freeze - yah right. The fam loved it!

Baked Chicken Amandine

Reviewed: Dec. 5, 2011
This was a good recipe to add to the casserole stash. I added a can of mushrooms and used french fried onions instead of almonds and butter crackers.

Turkey Brine

Reviewed: Nov. 27, 2011
Wow! This was a fabulous way to make turkey. I used coarse kosher salt and added unsweetened apple juice. Just right! I put the bird in a doubled turkey-sized bag and placed it in a cooler outside to work its magic. And did it...I'd never make another turkey without a brine. And yes...the gravy was delish. Roasting time was amazing. My 22 pounder was up to temp in under 4 hours.

Dill Pickle Sandwich Slices

Reviewed: Nov. 14, 2011
I made these when my garden was overflowing with cucumbers. I have been in search of a good sliced dill recipe for sometime. These were easy to make. I just opened my first jar yesterday when we grilled hamburgers. Contrary to the first review, we did not find these too sweet for our burgers at all. They are tasty! I will definitely be keeping this recipe.

Poppy Seed Chicken II

Reviewed: Oct. 20, 2011
I was a bit disappointed. It wasn't very creamy and scored a little low on the flavor scale at our house. I'm sure with modifications it would be OK.

Ham and Cheese Crescent Roll-Ups

Reviewed: Oct. 18, 2011
Some evenings beg for a simple snacky-type supper. When our family is running in several directions at once, you need a few recipes to pull out and this is one of them. My daughter was in charge of supper last night and made these easily. With only 3 ingredients, it's a cinch to keep them on hand all the time.

Butterscotch Oatmeal

Reviewed: Oct. 18, 2011
I always like to give the kids a hearty breakfast before the school day begins. This has a great creamy texture but a little on the sweet side. I will decrease the sugar for next time.

Baked Spaghetti I

Reviewed: Oct. 18, 2011
I like easy dishes for lazy Sunday suppers. This one fit the bill and was delicious. I used a jar of spaghetti sauce to make it even easier and eliminated the onion, peppers, mushrooms, and oregano. A keeper for the upcoming winter comfort food season!

Pasta with Fresh Tomato Sauce

Reviewed: Sep. 24, 2011
This was wonderful! I improvised a bit (added chicken, fresh mushrooms, and garlic) but the Italian dressing (I used Good Seasonings), basil (I used dried), and Parmesan cheese make this sauce something worth serving again and again! I grow Amish paste tomatoes - like Romas, but bigger - and this was a great way to use the end of the season bounty now that the canning is done! I will definitely be making again for guests!

Loved this and so did the kids. Good protein, too. Served this with some leftover apple pie filling from canning the previous day. Very yummy.
