Barbarella's German Pancakes

Reviewed: Apr. 4, 2010
I wanted to edit this to give all you folks who are having issues flipping these some tips. I make these probably once a month and they are my daughters favorite breakfast- about the only thing that will get her out of bed. *Use a good non stick skillet *make sure you are starting with a hot oiled (Pam) skillet *you will need Pam and I reapply after every 2-3 pancakes *you have to make sure most of the moisture has evaporated before flipping. For me it is about 35-45 seconds depending how thick they are. They should look "dry" not wet. *to get the perfect shape I pour with one hand and rotate my pan with another until I get the size I want. I just eye it. They are usually very thin on the outer edge. *To remove from the pan I go around the edge with a rubber spatula then flip with my hands. Yes hot but doable. *they should be very light golden brown when you flip *the second side just needs a little time in the pan you don't want these to be crunchy When I was a kid in elementary school they had an International day where Moms came in and cooked things from their native land. I stumbled across the room where one of the Moms was making German Pancakes. I probably ate 10 of them that day and have never forgotten the crepe with the lemon and sugar on them. I made these this morning for my lemon crazy dd. She loved them and so did I. It doesn't make a lot, in fact, the two of us ate the whole batch. Thanks for sharing the recipe Deborah. I will make these again.

No Bull Burritos

Reviewed: Apr. 2, 2010
This is easy and it is pretty darn good! I did add some additional seasonings to the beef, but this recipe is pretty forgiving. Thanks for sharing. My husband actually said it was better then a lot of other meals that are time consuming.

Nanny's Spaghetti Sauce

Reviewed: Apr. 1, 2010
I thought I might have finally found the perfect Marinara sauce. I will continue my search. I thought this was easy to make, but it was lacking in spice. I didn't mind the vinegar I minded the sugar. It was very sweet and a little to sweet for my taste. Thanks for sharing.

Colleen's Slow Cooker Jambalaya

Reviewed: Apr. 1, 2010
I really wanted to like this, but in the end I just thought it was ok. I will try it today for leftovers to see if the flavors have jelled a little bit. I only cooked it for 4 hours in the crock pot because my chicken needed to thaw. My veggies were still crisp. I think this is one of those dishes you don't want to hurry. The other thing about this recipe is that it is VERY spicy. I have a spicy palette and add Tabasco to almost everything. I had the bottle of Tabasco on the table and almost added it before I tasted it. I decided I better taste it first if I was going to rate it and boy I'm glad I did. This was spicy. I thought with the amount of meat and liquid and rice the spice would be absorbed. Spicy was all I could taste- no other spice. I would cut the spice in half- most people would not be able to tolerate that amount of spiciness. I did not find any thing off with the amount of liquid in the dish. Thanks for sharing. I'm glad I finally tried this one.

Molly's Chicken

Reviewed: Mar. 30, 2010
This was great for an easy busy dinner night. I upped the spices a little bit. I also doubled the sauce because I only had the big cans of tomato sauce. I know that when you do sauce in the crock it is usually very thin so I took the chicken out and added a sludge of corn starch and water put the pot on high, took the lid off and it thickened up nicely. Thanks for sharing.

Standard Greek Salad

Reviewed: Mar. 27, 2010
I made this salad this morning with organic produce I picked up from Bountiful Baskets. I made exactly as directed except for the olives then let it sit in the fridge to marinate. It does need some salt and pepper and maybe a little oregano. With just the wine vinegar it is a little flat. I think that the feta and the olives should give it a little salt, but I omitted the olives (was all out) and my feta just wasn't salty. Really light and refreshing and a great warm weather treat! Thanks for sharing.

Honey Butter Spread

Reviewed: Mar. 22, 2010
What's not to like? Honey and butter mixed in equal portion? YUM. I used unsalted butter and wild desert honey. The honey you use will effect the taste of your butter so use a good honey. Thanks for sharing.

Kofta Kebabs

Reviewed: Mar. 19, 2010
I followed the recipe except I used beef- will try the lamb next time just didn't have any and I didn't have any ground coriander. The flavor was nice- heavy on the garlic, but the other spices complemented well. After getting the skewers all ready and getting these on the grill I decided next time to ditch the skewers. I just didn't think I needed them. I think this might make an interesting burger in a pita with some middle eastern toppings. Thanks for sharing. We love to try new things.

Sweet and Spicy Pork and Napa Cabbage Stir-Fry with Spicy Noodles

Reviewed: Mar. 17, 2010
I made this last night with a couple of modifications. I used spaghetti instead of chinese noodles because that is what I had on hand. I also used fresh garlic and ginger- taste so much better then the dry. I used green onions instead of the white- just personal preference. I used only 1 Tablespoon of the sweet chile sauce and the rest I used the garlic chili sauce- we like spicy more than sweet. Instead of napa I used regular cabbage because I had that on hand from a corned beef. This is a forgiving recipe and you can really add or subtract your flavors, veggies and spiciness based on your personal preferences. It made a HUGE amount of food. Thanks for sharing.

Spicy Black Bean Cakes

Reviewed: Mar. 8, 2010
This was very good. Next time I will chop up some more onions, garlic and jalapenos. I also think I would like them pan fried in some oil instead of under the broiler. Thanks for sharing- my dd actually thought they had meat in them:) Make the lime sour cream sauce makes them good!

Spicy Green Beans and Pork, Asian Style

Reviewed: Mar. 7, 2010
This has been sitting in my box for a long time. This is a very good and easy to make recipe. Next time I'm going to up the spices just a bit and maybe add some hoisen sauce. I will make this again and this would be a good busy dinner night meal. I served over brown rice. The other thing that is great about this recipe is that it didn't require me to buy any additional spice ingredients. Thanks for sharing.

Gypsy Soup

This is an interesting soup. My vegetarian sister is in town so I made this for her dinner and I had a bowl at lunch. I followed the recipe exactly, but thought it needed a bit more salt. Very nice mix of flavors. Thanks for sharing.

Asian Pork Tenderloin

Reviewed: Mar. 4, 2010
This was pretty good. My chili sauce was spicy so this was to. I did not marinate overnight just a couple of hours. I would have cooked it a lot less as we like our pork medium to medium rare. This was not pink at all after it rested. Cooking it less would also prevent the marinade from burning around the edges. Next time I might throw it on the grill. Thanks for sharing.

Mexican Tinga

Reviewed: Feb. 22, 2010
I made this exactly as written. I added 2 cloves of garlic and used half of the chipotle can. I thought it was going to be uber spicy, but it was not. I did think it was a little flat and next time I will add salt and some more spices. I also did this in the crock pot and it worked well. Thanks for sharing.
