I really wanted to like this, but in the end I just thought it was ok. I will try it today for leftovers to see if the flavors have jelled a little bit. I only cooked it for 4 hours in the crock pot because my chicken needed to thaw. My veggies were still crisp. I think this is one of those dishes you don't want to hurry. The other thing about this recipe is that it is VERY spicy. I have a spicy palette and add Tabasco to almost everything. I had the bottle of Tabasco on the table and almost added it before I tasted it. I decided I better taste it first if I was going to rate it and boy I'm glad I did. This was spicy. I thought with the amount of meat and liquid and rice the spice would be absorbed. Spicy was all I could taste- no other spice. I would cut the spice in half- most people would not be able to tolerate that amount of spiciness. I did not find any thing off with the amount of liquid in the dish. Thanks for sharing. I'm glad I finally tried this one.
