Baked Lemon Chicken with Mushroom Sauce

This could be a 5 star recipe with the following changes. First the lemon is completely lost in this dish so if you are looking for a strong lemon flavor this one wont take you there. Next time I will brown the chicken with salt, pepper and herbs. The sauce was good, but very bland. I added salt and pepper. If your using a cheapo chicken stock that has a lot of salt in it you may not need the salt, but I used a good organic stock. I served this over spelt and it was good. I will make this again with changes thanks for sharing Joyce.

Carrot Rice

I thought this was interesting. If I make it again I will up the amount of cayenne- I just used a pinch fearing it would be to spicy and I will add a tad more salt. Very nice subtle ginger flavor with this one. Thanks for sharing.

Baked Orange Roughy Italian-Style

Winter Lentil Vegetable Soup

This is a very hearty soup for having no meat in it. Pretty tasty too. I had no trouble with the lentils being soft following the directions. They were cooked through. The only thing I did different was to sauté my carrots, onion, garlic and celery in a little olive oil before adding the broth and tomatoes. I think it is the key to a good tasting soup. Just took the lentils out and drained added the evoo and veggies, quick sauté and then followed the recipe again. If I make this again I will forgo the whole tomatoes and use the petite diced tomatoes. Thanks for sharing Cecile.

Cheddar Bay Biscuits

Pretty yummy biscuits for the ingredients and time involved. I cut my servings down to 10 and got 9 really nice sized biscuits out of it. I could have cut the butter mixture in half as I had a fair amount left over. I cooked mine for the whole 12 minutes.

Traci's Adobo Seasoning

I loved this. I made a whole batch so I would have some sitting in the cupboard when I need it. Next time I will cut the salt down by 1/2 T. I used it on bone in skin on breast baked in the oven. Since everyone in the house was at meetings I ate round one by myself. My dd ate it when she got home from church and said it was a good dinner:) Thanks for sharing Traci.

Jen's Heavenly Egg Salad

Very good egg salad. I followed the recipe to a t. I have now put it in the fridge to get the flavors to gel a little bit. I love the hint of lemon in it. My lemon was huge so I used a half of a half and it was the perfect amount probably 1.5 tablespoons total. Thanks for sharing.

Orzo with Kale

I have never had kale before and I got a bunch in my bountiful basket this weekend. I found this and we LOVE orzo so I thought I would give it a try. Not sure why you need the turmeric other than it makes your orzo a pretty color. This makes a HUGE side dish. I normally only make half a pound, but I wanted to follow the recipe. Make sure you stem the Kale- it doesn't get soft and I was glad I did a good job on all but one leaf. Kale is not bad, but I think the lemon juice and parm is a little on the light side for this much orzo. I also found my kale starting to burn with no water just the evoo to cook it in and my garlic was clearly on the brown side. If I did this again I would cook my garlic then add a little water or stock to steam my kale instead of cooking it in the oil. Some of the pieces got really crispy. Thanks for sharing overall it was good I would just make a few minor changes next time.

Granola Bars, honey based.

These are very good granola bars. I have been looking for something to give my husband when he hikes and bikes without chocolate. These fit the bill perfectly. I think this would be a good variation to add a lot of different seeds, nuts, fruit and peanut butter. A couple of things that I noticed. My oven is dead on temp wise and I think I could go 10 minutes on the oats instead of 12. Also, even with a liberally greased pan I had a hard time getting them out of the pan. When the recipe submitted says liberally grease she means it! Finally, I wasn't sure what a rolling simmer was. Be patient and keep stirring it took me 10 to 15 minutes before I got a rolling simmer on a med/low heat (gas). Also, when you put the vanilla in your mixture will foam up so make sure your sauce pan is large enough to handle that. Thanks for sharing a tasty healthy granola bar. I will be making these again.

Mexican Cucumber Salad

Es muy bueno y es muy pico! I picked up my bountiful baskets this morning and there were 2 cucumbers, cilantro and a tomato. I had corn from last week so I whipped this up this morning. I used all fresh ingredients, but since I added the extra cucumber I doubled the red wine vinegar, but not the spices. I actually re read the directions to make sure it really had a tablespoon of red pepper flakes in it. If you don't like your food spicy I would go with 1/2 or less. My husband is eating his with chicken wrapped in a tortilla. My mouth is still zipping. Thanks for sharing.

Addictive Sweet Potato Burritos

This is an interesting burrito. I had some sweet potatoes to use up so I decided to give it a try. It was an interesting combo of sweet and savory- which I like. My bean mixture was a little watery (to watery to use as a filling) when I added the water. I really needed to let that cook down a little before making the burritos. I made half with colby jack and half with mozzarella (my husbands preference) Next time I make these I will mix the potatoes and bean mixture together because even though I layered one on top of the other prior to wrapping up they seemed to separate in the burrito with one side being potato and the other black bean. I can see why these are called addictive because the more you eat them the better they seem to taste so don't judge on the first bit alone. Thanks for sharing.

Tasty Lentil Tacos

Very good meat substitute recipe. SHHH....my dd didn't even know it was not meat. If I was a vegetarian I would give this 5 stars for sure. Very economical too! Thank you for sharing I will make this when my veggie sister comes into town.

Shrimp and Feta Cheese Pasta

Good base recipe. I just didn't think there was enough of a "sauce", in fact, I thought the pasta was rather dry. If I did this again I would add more white wine and maybe add some butter in the end for a smooth sauce. Thanks for sharing.

Chocolate Peanut Butter Cups

YUM! This is a great recipe for ease. I used mini cupcake/muffin papers and found a melon ball to be the perfect size for the chocolate and peanut butter. I put the round end of the melon baller in the center in order for the chocolate to come up the sides. I did have extra peanut butter filling left. Thanks for sharing I will make these again.

Spicy Rapid Roast Chicken

My chicken came out moist and the skin was perfect. I was surprised how moist the chicken was even the wing which usually dries out on me. Followed the recipe exactly. I did get some smoking in my oven, but that was because it was dirty a clean oven shouldn't smoke. Thanks Nancy for the recipe. I will do this one again.

This was good and we enjoyed it. It is certainly easy to do and has a nice flavor to it without it being bbq. I followed the recipe to a t except used a different red wine that I had opened. The meat stayed moist and flavorful. Thanks for sharing.
