Butternut Squash Soup with a Kick

I love butternut squash soup, but I have never made it. I followed this recipe exactly and I thought it was quite good. I liked the addition of ginger and the jalapeño. My husband thought it was to rich, but he did like the flavor. This was easy to make. Thanks for sharing the recipe.

Pasta Fagioli Soup II

I might be the lone dissenter on this one. This soup is just ok in my opinion. I followed the recipe exactly. I thought the taste was really flat and one dimensional. I had to add some spice. Secondly, I just really hated the canned spinach in this. It actually made the soup taste like "can" I think I would use fresh instead. This did make a large amount of soup unfortunately I'm not sure it will get eaten. Thanks for sharing.

McKagen's Beef Jerky

This is the first time I have ever made beef jerky. I think I maybe could have left this in the oven for an hour or so longer. It is a little heavy on the Worcestershire sauce in my opinion so I think next time I might cut that in half. Here is a tip. I had the butcher at the market slice the meat from a roast. Made it super easy for me to throw it in a bag and marinate it over night. I did take a couple of the strips of meat and added red pepper flakes to them for a little zip- they were tasty.

Butterscotch Oatmeal

WOW, this is REALLY sweet as written and I have a sweet tooth. I tend to like my oatmeal a little on the dry side and this is very glutinous. I don't think I'll be making again, but I'm glad I tried it. I have looked at this loads of times, but never actually made.

Spicy Chipotle Grilled Shrimp

If you like shrimp and you like spicy chipotle you will LOVE this recipe. I had a bag of frozen shrimp and some chipotles that I had leftover and frozen from a previous recipe. This was easy to do and so tasty. Didn't change the recipe at all except for adding some extra chipotles because I didn't want to refreeze them. We chopped up the shrimp to use in tacos. I threw some more cilantro on top with chopped red onions then gave them a squeeze of lime juice- YUM! My husband loved this meal and asked for it again already. I'll have to cut back on the chipotles to make it kid friendly, but this one is a winner. Thanks for sharing.

Thai Pork with Peanut Sauce

This was decent, however, I thought the cumin was a bizarre spice for thai? I had run out of cayenne, darn it, so I just went without. I use organic peanut butter and chicken stock and sometimes I need to remember to salt a little bit heavier with those. Pretty decent dish, but I would not make it if you don't have the peanuts, cilantro, onions and bell peppers. They are the icing on the top.

Smokey Chipotle Meatloaf

I really LOVED this recipe. It makes a super moist, flavorful and spicy meatloaf. I followed the recipe exactly. What I love is the zip and smoky flavor the chipotles give this meatloaf. I used two small chipotles from the can and I could taste the spice. If you're meek with spice I would go easy on the chipotles maybe only use 1 chili. I will make this again. Thanks for sharing the recipe. This is one of the better ones on AR.

I really loved this and it was easy to do (kid friendly) and super flavorful. I followed the directions exactly except I omitted the ghee. This was fast and I had every thing in my kitchen to make. Thanks for sharing Alia.

Cindy's Jambalaya

Cindy I have tried a lot of jambalaya recipes on this site and they have all been ho hum. This one is excellent. I can not find Conecuh brand here in the southwest so I used Boarshead Hot Smoked Sausage and it was delicious with the shrimp. Just the right amount of seasonings too. Thanks for sharing. I will make this again.

French Dip Sandwiches

This was pretty good. I might do a different cut of beef next time because even though I trimmed the fat there was a lot of fat in the cut. The seasoning was dead on and I did not find it to salty. Thanks for sharing this made for a nice busy night quick dinner.

Cinnamon-Marshmallow Surprises

I'm would have given this 5 stars, but I had a problem with them baking. Mine appeared to blow out on the top and the marshmallows melted all over the muffin pan. I think I should have poked a hole in the top of these to release steam as they were baking. I had a lot of butter left over so I would probably cut that down a little next time. I also sprinkled some of the leftover cinnamon sugar on top of each muffin. I will make these again with the minor adjustments I listed above. Thanks for sharing.

Meatball Soup

This was really tasty and easy to do. Bonus I had all the ingredient in my pantry. The only changes I made was to sauté the the veggies in a little evoo before the water went in. Then followed the recipe exactly except for adding 2 cups of macaroni instead of one. Actually 1 1/2 would have been perfect. Thanks for sharing.

Italian Chicken Skillet

This one was just ok for us. It is a pretty healthy meal; I just felt like it needed a lot more spice and a little salt and pepper. I only used 2 blsl chicken breast because mine were large. I didn't have any small shell pasta, just bow tie. I did need to cook it longer, but I fully expected that. Thanks for sharing.

Sesame Seared Tuna

Made this last night with some beautiful ahi. I followed the recipe exactly on thing I messed up on was adding the rice wine vinegar to the entire dipping sauce. Oh well it came out fine. I also doubled the dipping sauce so all four of us could have our own. Next time I may cut back on the sesame oil just a tad. Oh and the 30 seconds per side in the cast iron pan was perfect I just had to dust the cob webs off of it before I used it:)

Zesty Slow Cooker Chicken Barbecue

Wasn't sure how this was going to turn out because the smell was a little off to me while missing the dressing with the barbeque sauce. In the end it turned out fine. Next time I will add about a T of red pepper flakes for a little spice. This was certainly easy to do on a busy night thanks for sharing.

Udon Peanut Butter Noodles

I'm giving this 5 stars because I was able to whip this up super fast with what I had in my kitchen and it is really delish! I cut the servings down to 2 because it was just my daughter and me, but we actually got a 3rd meal out of it for her friend who stayed. They both loved it. Thanks Mojito Mama- cute name!

Shredded Beef for Tacos

I made this yesterday and it is pretty darn good. I was a little skeptical at first putting a frozen roast in the crock pot, but it worked out nice. The sauce is a little runny so I put the crock on high and left the lid off for a little bit after I shredded it. Next time I will increase the garlic by triple- when you cook something so long you loose that strong flavor. I will also up the green onions and cilantro. Thanks for sharing this is an easy one to do. Great for those super busy days when nothing is thawed out.
