Italian Spaghetti Sauce with Meatballs

Reviewed: Jan. 8, 2011
I'm rating this for the sauce only. It was delicious! I doubled the garlic thinking I was doubling the recipe, but discovered that the recipe took 2 cans of tomatoes. By that time it was to late. I also used an immersion blender to make a finer sauce. This will be my go to recipe from now on. Thanks for sharing Jeremy!

Ricotta Cake

Reviewed: Jan. 2, 2011
I have been looking at this recipe for months. We are not big fans of ricotta, but I thought we would give this a whirl. Remember that you cook your cake mix according to the directions for me this recipe took a total of 7 eggs. The ricotta mixture is more like an egg custard then a cheese cake. If you like egg custard you will love this cake. The flavor is delicate and I liked it. I can see why people love this with a fruit topping. This cake would be the perfect foil for that. Next time I will NOT do this in a bundt pan. Although the presentation was pretty I did have issue with it getting out of the pan. Also, it took a lot longer to bake- almost 30 minutes more. I also think this is one of those recipe where you want to use good quality cheese and cake mix. Thanks for sharing the recipe. I love to try new things and can not believe that I have never had this.

Made this one the other night for dinner and it was good. There is another recipe on here that my kids liked a little better without the sausage.

Buttermilk Corn Bread

Reviewed: Jan. 2, 2011
This is very good tasting corn bread. It is a little bit on the sweeter side, but not desert like. It does have more of a tan hue then a golden corn hue to it due to the brown sugar. I also had some issues with it getting very dark brown on top with some almost burning edges due to the high temp that you cook this one at. It took the full 25 minutes in my oven and my oven is new and the temp is spot on.

Spinach Quiche

Reviewed: Dec. 25, 2010
I made this last night and the appeal was crustless because I had some guest coming that eat gluten free. Very good and easy to make. I made it earlier in the day and kept it refrigerated until I was ready to bake it. The only change was to use fresh spinach and add salt and pepper. Thanks for sharing.

Hungarian Mushroom Soup

Reviewed: Dec. 25, 2010
I followed the recipe exactly. It was very easy to make and I was able prepared it up to the last step before adding the sour cream; leaving it on the stove while we left for Christmas Eve service. It worked out beautifully and tasted really good. Don't skip any of the ingredients they are all key to the recipe. Thanks for sharing. I will make this again.

Linda's Lasagna

Reviewed: Dec. 18, 2010
I followed the recipe to a t with the only change being using raw noodles. Having said that, next time I will not simmer the sauce so look and keep it wetter so that the lasagna is a little more moist after cooking. I LOVE the sauce may use it for pasta some time in the future. Thanks for sharing.

Pan Roasted Pork Tenderloin with a Blue Cheese and Olive Stuffing

Reviewed: Dec. 16, 2010
We might be the lone dissenter here, but we just thought this was ok. No one liked the sauce very much. I think it might have been the dijon mustard in the sauce that we didn't care for. Thanks for sharing

Chicken Wilson

Reviewed: Dec. 14, 2010
I would probably give this 3.5 stars. I ended up with a lot of liquid (not sauce) in my dish. Not sure why that was. I was thinking the wine and butter would make more of a sauce, but it was very liquid. I also reduced the number of eggs. 6 eggs seemed like overkill and since the eggs didn't go in the dish I used 2 and it was plenty to cover the 4 breast I had. I also had to use more then a cup of bread crumbs. It was probably more like a cup and 1/2. Overall taste was fine, although, my kids thought that they would like mozzarella cheese better. Thanks for sharing the recipe.

Mimi's Smoked Salmon Chowder

Reviewed: Dec. 13, 2010
This was very good chowder. After reading all the reviews I chose to follow the recipe as written. The only ingredient I did not have was tarragon and I made my own 1/2 & 1/2 using heavy cream and milk. The 1/2 cup of flour makes it hard to call that step a roux because it is so dry. I added a little chicken stock to make it more of a paste. The important part of this step is to make sure you "cook" the flour so it doesn't taste like paste:) My soup thickened up nicely and I had no issues with a runny chowder. I had no issue with the chowder being salty, but I use very good organic chicken broth. I usually have to add salt when I use the broth, but after tasting the smoked salmon (which can be salty) I decided not to season with salt and I'm glad I made that decision. I think this is one of those recipes that you really need to us good quality ingredients. I would also recommend sampling your smoked salmon to make sure it is not real salty. You can always season at the end- much easier then fixing something that is to salty. Thank you for sharing this recipe. We love soup and this one is a good, tasty filling one. I can not wait to eat the leftovers for lunch today.

White Chicken Chili with Jalepenos

Reviewed: Dec. 4, 2010
I used this recipe as a guide to making it in the crock pot because I was very lazy yesterday. Used the same ingredients just didn't do the step with the oil. I used roasted minced garlic from the jar (told you I was feeling lazy!) All the spices I kept the same except I threw the jalapeño in the pot. Oh, the only other change was only having one can of white beans, but I had black, pinto and garbanzo and it worked fine. I don't think any of the changes I made messed with the taste of the original recipe. Thanks for sharing Valley Girl. This tasted good on a cold desert night:)

Vegan Bean Taco Filling

This was just ok for us. I think it was a tad heavy on the cumin. It did make a nice alternative meatless meal.

Easy Shakshuka

Reviewed: Nov. 22, 2010
I made this yesterday morning for breakfast. It took a little bit longer to make then our normal Sunday morning breakfast, but it was a nice change. I had all the ingredients in my pantry. The only change to the recipe was the addition of salt and pepper. Served it with a pita bread. Thanks for sharing. It is always fun to try new things.

Pumpkin Gingerbread

Reviewed: Nov. 15, 2010
OK, I was baking challenged today for some reason. I almost forgot to put the pumpkin in and then forgot the water, but the loaves were already in the oven so I just went with it. Not sure what the water does, but even without this bread is delicious. I actually like it BETTER then the down east maine pumpkin bread from this site. Spice is right on and it is moist. I took a loaf and froze it for later and we'll work on the other one for now. Thanks for sharing.

Hot Crab and Jalapeno Dip

Reviewed: Nov. 14, 2010
I made this last night for a party. It is pretty good. Not outstanding, but good. I think next time I would use the whole jalapeño. I think it could use a little more cheese too- maybe a cup worth. All in all a success just may need to tweak it next time.

Awesome Red Wine Pot Roast

Reviewed: Nov. 9, 2010
SOOOO BUMMED! I put this in the oven after following the instructions. Left the house but made sure I was back before the 3 hour mark walked in the house...OH UH, smells like something is burning. Yup all the liquid is gone and the veggies haven't even gotten into the pot. I think you really need to watch this one. I did it in my Le Creuset and my new oven temp is dead on. Good thing the Le Creuset pots clean like a charm even if they are a burnt mess. I was so looking forward to this meal. I just hope the meat doesn't taste burnt, but I don't have high hopes for it.

Family Favorite Chicken Lo Mein

Reviewed: Nov. 9, 2010
This didn't work out for us. I make dishes like this a lot and black bean and garlic sauce is a staple in my pantry. I think the 3 tablespoons was a little much. I LOVE the stuff, but thought this dish was too salty. I even left out the soy.
