Gourmet Mushroom Risotto

I loved this recipe. I followed it exactly. It is time consuming, but so worth it. I chose this one because it didn't require any white wine. Thanks for sharing. This tasted almost exact to some risotto I had at a Napa restaurant

Pork Chalupas

We LOVED this. I followed the directions to a t except I only had 1 can of green chilies and wasn't going to go to the store for the other 2. Can only imagine it makes this a little tastier:) I'm not sure what size shoulder I got, but it was on special. I wasn't sure how the beans would cook and I was a little leery that they would even soften up and be edible. I did have to replenish the water after 4.5 hours and it seemed the beans all of a sudden soaked up all the liquid. Glad I was around to refill. That fact may make it difficult to do this dish in the crock pot and be away from home all day. I cooked mine on low for 10 hours. The meat was delicious and oh so tender, but the beans, to die for. I think the fat and flavoring must really get into the beans as they slow cook. I could eat a whole pot of just the beans. This makes a TON of food. I'm going to freeze some of it before my DH turns into a Chalupa! He has eaten this every meal since I have made it because he likes it. One more thing, if you refrigerate this you can easily skim the fat off the top. Shoulder is a fatty cut and what makes this taste so darn good. Thanks Fanifergus I will be making this again.

Holly's Smoked Salmon Pasta Salad

This was just ok for us. Apart, we like all the ingredients in this salad, but together it was just ok. I did try half with the blue cheese and half with the Italian dressing and preferred the Italian over the blue cheese. I thought the blue cheese dressing was to heavy and rich for the salmon. Sorta Salisbury Steak

This one was fork tender, but I had a couple of issues. First, I too added seasoning to the flour. Salt, pepper, garlic and onion powder. I was a little concerned when I put it all in my dutch oven that the broth wasn't completely coving the meat. I put it in at 350 for the alloted time and when I pulled it out almost all the broth had evaporated. If I did this again I would completely cover my meat and onions with the broth and turn the oven way down to maybe 300. 350 for 2 hours is a long time. My oven temp is spot on and I use very good enamel pots. I was able to salvage the gravy by adding the rest of my box of beef broth and heating it up. I had no issue with whisking the leftover flour into my pot and getting it to thicken without lumps. Thanks for sharing.

Wheat Germ Whole-Wheat Buttermilk Pancakes

I would probably give these 3.5 stars. They taste just like a normal pancake, but the texture is a little different. The batter was a lot thicker then I expected and I tried to thin it out a bit with a couple of tbs of buttermilk, but it really did not work. You do need to cook these slow and low because of the thickness other wise they will be raw in the center. Not sure if I will make these again. Thank you for the recipe.

Mushroom Orzo

I made this last night and it was good. My only complaint was it was a little oily from all the butter. I think next time I would maybe cut the second divided part of the butter in half. I would also up the last part to 10 minutes instead of 7. My orzo was a little crunchy, but that was my fault for not testing not the recipes.

Maple Glazed Turkey Roast

I'm not a big fan of maple or liquid smoke so I took a leap of faith on this one. This was excellent. I loved the flavor combination and even better this was the juiciest turkey breast I have ever made and I make a lot of them. Not sure if it was the lower then normal cooking temp or the basting. This took exactly an hour and a half and my breast was a little under 3lbs. Thanks for sharing this.

Whole Grain Waffles

My husband and my niece loved these. I think I was more in love with the idea of them. I followed the recipe except I didn't have applesauce- I make my own and didn't have any I just doubled the oil. I didn't have flax meal just flax seeds- my husband says you loose nutritional value when they are ground? I used only a 1/4 of the seed. My husband loved the texture difference, me, not so much. I also think the next time that I might up the vanilla a little bit and maybe the sugar. I also didn't oil my waffle iron because of the added oil in the batter. I had a little sticking, but it was manageable. Thanks for sharing the recipe.

Cucumber and Blue Cheese Salad

This was good. You have to like blue cheese and a marinated cucumber. I left out the olives- just a personal preference and all the rest of my ingredients were fresh and organic. Thanks for sharing.

Southwestern Casserole

I made this last night with only 1lb of ground beef and left all the rest the same. I have leftovers and I froze some. I did up the spices- all of them and added some cayenne. This was pretty tasty and easy to do. Thanks for sharing.

Pork Chops with Raspberry Sauce

I made this last night and it is a good recipe. I'm not a huge fan of sage, but the amount works well on the chops. I upped the salt to 1/2t. I had a chief tell me once that most people do not salt their meat enough and i thought 1/4 t was to light for 3 big chops. The sauce is sweet as raspberry jam is. I think I would like to try this with another flavor - maybe apricot. I also used balsamic vinegar, but now wonder if I had used white wine if the acidic quality would have cut the sweetness a bit. I also had to salt and pepper the sauce. All in all a very good and different recipe. Even my picky daughter (who turned her nose up at it in the cooking process) liked it. Thanks for sharing, Robin.

Antipasto Pasta Salad

This is a delicious antipasto salad. Probably one of the best ones I have made or eaten. Very flavorful. Again, I think this is one of those recipes that it pays to use good quality ingredients. The dressing is fabulous and I used a very good syrupy balsamic vinegar for it. Thanks for sharing. Took this to a volleyball tournament and it was gobbled up quick. For anyone who is wondering asiago cheese is a cross between parm and moz. Not as soft as moz, but nutty in taste like parm.

Fortune Cookies I

I'm giving these 5 for cuteness. My daughter and I used this recipe to ask a boy to a dance. We made big ones and put a homemade fortune into it- the invitation to the dance. The taste was not like a conventional fortune cookie, but they didn't taste bad. Not 5 star taste though:) Here is what I did learn. We put 2 on a baking sheet. The grease actually makes it difficult to form the circles (the dough just slides down the sheet) and tilting the pan is the easiest way to get a uniform circle. I found it easier to put them on a silipat sheet with no grease. They did not stick, but where a little tricky to get up. The key is a wide spatula for sure and plastic worked better then medal for me. I also kept the second cookie on the baking sheet while working (folding) the first one because I learned with the first batch that if you let them cool even slightly they will break when you fold them up. We put these in a cute chinese take out box. Thanks for sharing.

Pork Marsala

This was good, not great and needed much more seasoning. I thought the pork/sauce was bland. In fact, I thought the sauce needed a little more umf to take away the sweetness of the marsala wine. Thanks for sharing.

Cinnamon-Raisin Granola

I made this the other morning and it is very good. My chunks did not stay together and I'm not sure why. It does taste good just the right amount of cinnamon and vanilla IMHO. The only change was to leave out the raisins and use dried blueberries. They are very good in it. *edit* I made this today and upped the honey, oil and brown sugar to 1/2 Cup each. Much more like commercial granola where it held together in little chunks instead of loose oats. This is much better.
