Apple and Zucchini Salad

This is a good fresh recipe for using up the zucchinis and apples in season. I made 1/2 recipe and we both liked it. I used red bell pepper and yellow onion because that is what I had on hand. I gave a bit to my husband for lunch and told him it was zucchini apple salad. The title did not excite him but, he said it was better than he thought it would be. The rest is marinating for dinner. Season it to taste.

Mom's Breakfast Strata

I used 1 lb french bread slices (toasted for the base) and cubes for the top layer. I did not have mushrooms or peppers so I did without. I did add 1 tsp mustard and 1 tsp garlic powder and about 1/2 tsp seasoned salt to the egg milk mixture. With that much bread it cooked faster than I expected. It was beautiful toasty brown with I took the foil off after 35 min. I know I changed the recipe a lot but it is a great inspiration to start with.

Mom's Paprika Chicken with Potatoes

This recipe is good in concept but I had too much broth to get any browning or crispy spots on the chicken or potato. I poured off the liquid and made a delicious gravy. I used a spicy seasoning mix instead of the paprika, salt, pepper and garlic and the dish had lots of flavor.

Tortilla Soup III

Excellent base. I used 1 lb. beef, 3 cloves garlic cooked with 1/2 chopped onion and beef. I used 2 cans tomato quick pulsed in blender. I used 1 can creamed corn and 1 can regular corn. You can add more spices as needed. I served it with pepper jack cheese and pizza peppers on the side to use as desired. I also doubled the tortillas, dicing two for the soup and toasting the others to put on the bottom of the bowl before adding the soup. Excellent casual meal for company.

Blue Cheese Waldorf Salad

Good recipe. My husband declared that he likes Waldorf Salad and ate up the last of it. I used feta cheese because I did not have blue. It is pretty salty so it did not need the extra salt.

Speedy Salmon Patties

I made this with a 6 oz can of salmon from Costco keeping all the other ingredients the same as the recipe. I coated each patty lightly with flour and fried in just a bit of olive oil on a non-stick griddle pan. We really loved the result.

Stir and Drop Sugar Cookies I

I baked as directed in the recipe except, I used a whole lemon for zest, putting at least 2 tsp in the dough. I baked at 350 for 7-8 minutes convection. For flavorful Christmas cookies, top with icing made with the rest of the lemon zest, lemon juice and powdered sugar. Add sprinkles or colored sugar for decoration. Excellent, not too sweet flavor!

Fruity Curry Chicken Salad

Excellent recipe. I had some cooked chicken breast and came to all recipes to look for a dinner idea. This was perfect. I went light on the curry but next time I'll put in the full amount. I only used about 1 1/2 cup cooked chicken and reduced mayo to 2 Tbsp mayo and 3 Tbsp milk kefir. The other ingredients were about the same.

Aunt Betty's French Dressing

I doubled this recipe but only used 1/2 cup sugar total (1/3 of what is written in the recipe). It was still very sweet and very delicious. Fantastic recipe, just adjust the sugar to your taste.

Brownie Bread

I used freshly ground hard white whole wheat flour. I needed to add an extra 1/3 cup for proper hydration. I mixed it in my bread maker but baked it in two bread pans in the oven. The bread rose high and beautifully light. It made two one-pound loaves. I used slightly less sugar (about 1/2 cup) and left out the one egg yolk. I froze the second loaf for later. The chocolate and sweetness are subtle. Don't expect it to taste like a brownie. My husband and I loved this special treat bread. Thanks for the recipe.

Wild Grape Starter

This recipe produced a vital and active sourdough starter without any added commercial yeast. I use it at least once a week to keep it fresh and ready to go. It will raise a beautful loaf all by itself. (Be sure to give it extra time.) I always replenish it with whole wheat flour and water and let it sit out of the refrigerator until it is good and bubbly. Then I refrigerate it until I'm ready to use it again. It makes absolutely heavenly waffles and biscuits. The waffles alone are worth making this starter. The instructions say to discard the dough during the initial fermentation process. I didn't, but used it in breads and quick breads with good results. The fermentation process was faster than I expected. Maybe the temperature was warm here. Also I started with grapes a bit on the old side. I think they had alreay started to ferment.

Honey Mustard Dressing II

I told my husband I had been experimenting with new salad dressing recipes. I made a new honey mustard dressing. He warned me he was not a "honey mustard" kind of guy. I served it on a main dish salad with lettuce greens, chopped bell pepper, carrot, celery, and sauteed turkey breast, all topped with toasted almonds. It was fantastic. After he licked the bowl, I asked him how he liked the honey mustard dressing. He asked, "That was honey mustard?" He loved it. This incredibly easy recipe will be a staple in our house. I used dijon mustard and low fat mayo from Trader Joes.

Spaghetti Carbonara II

We loved this dish. My changes... I don't eat bacon so I used one half lb. diced turkey ham cooked until lightly browned. I used about half the oil and just three eggs. These changes considerably reduced the fat. I admit it was not creamy or saucy but we liked the texture and flavor. Allrecipes is so helpful! I wanted to make a carbonara, did a quick search and scanned the recipes, decided on this one, printed it up, all in the four minutes it took my turkey ham to defrost in the microwave. I had dinner ready in less than 15 minutes!
