Carrot Cupcakes with White Chocolate Cream Cheese Icing

Reviewed: Oct. 24, 2013
My Husband loved these and brought them to work and I had tons of compliments. I might add more white chocolate but this recipe is great! I cut back on the sugar to 3/4 cup but next time I will do a full cup. I used orange juice instead of the extract and cut the icing sugar down to 3 cups. I love that the icing has white chocolate in it for something totally different and interesting!

Fried Zucchini

Reviewed: Jul. 4, 2012
First time I have fried Zucchini and the recipe was a hit. I read the reviews and followed the suggestions, making sure I left the zucchini sitting in the batter for 30 or more minutes and that the zucchini was well covered. Great Recipe.

Jalapeno Pepper Jelly

Reviewed: Jul. 20, 2009
I have been making this Jelly for about 10 years. I have used the canned jalapenos or 4 fresh jalapenos with seeds for heat. If using fresh make sure you turn the jars so it doesnt all sit at the bottom. Always comes out great!!!

Potato Bacon Chowder

Reviewed: Oct. 16, 2008
Great Soup. I used chicken broth also and added corn and chopped carrots and increased the bacon. I added additional potatoes after the first batch was boiling for awhile and didnt mash them so my soup was thick with chunks, which is how we like it. My soup came out very thick so I did not bother to add any milk. Great recipe!!

Quick and Almost-Professional Buttercream Icing

Reviewed: Sep. 22, 2008
This icing was just what I was looking for as I didnt really want to take the time to do boiling icing. Not too too sweet but very creamy. I will use this again. Alot of flavorings can be added to this.

Jalapeno Pepper Jelly

Reviewed: Sep. 16, 2008
7 times I have used this recipe and it has never failed. Use the right amounts of sugar and make sure you boil the pectin for the right time, 5 min, it will set. I used 4-6 fresh jalapenos with half the seeds removed to replace the cans. I placed all the peppers in the food processor but didnt quite puree it and left some of the peppers chunky. I got great compliments and everyone thought it looked better than just clear.

Joy's Prizewinning Trifle

Reviewed: Aug. 14, 2006
Wonderful dessert. I had great raves. After reading the other reviews I used the Cream cheese pudding mix added that to the sour cream and made fresh whip cream. I went easy on the sugar in the whip cream and added some vanilla. I added the bananas to the pineapple which was great and used pound cake. I had fresh blueberries and added that also. I would definately do this again and try a different pudding mix. A nice light dessert for summer.
