Mom's Zucchini Bread

Wow! This could actually replace banana bread in our house! My son, who just got braces and won't eat much anymore, LOVES this bread so I will continue to make it weekly. I made it exactly as written, but I didn't add nuts (as I'm not a fan and I wasn't sure I wouldn't be the only one eating it). Next time, I'll add the nuts since it went so fast in my house!

Beer Lime Grilled Chicken

It was super moist, but it didn't have much flavor. I made it exactly as written, except that I let it marinate for about 2 hours) and cooked it on my George Foreman grill. It just needs something else. I think I would use beer and lime again, but add some other seasonings.

Green Pozole

This is quite similar to the recipe on the back of the "Maiz para Pozole" that you can buy here in Mexico City. Seeing as the recipe is by Herdez, that doesn't surprise me. The big difference in the two recipes is that the Maiz recipe uses several chiles (two different types) and this one uses only one. This is perfect for our family because my kids, while they are adapting, are still not huge fans of spicy food, and this Herdez recipe does a great job of toning it down a bit. We use this recipe often (it's a fairly easy tasty meal, with the slow cooker) and substitute chicken for all the pork as my husband doesn't eat pork (although I made it with all pork when we had guests, because traditionally in Mexico City, pozole is made with pork). I serve it with cilantro and Mexican cheese for our family.

Slow Cooker Chicken Thai Ramen Noodles

Really easy to make for a night when you know you won't be home to cook. I threw all the ingredients in (I used frozen chicken thighs) and let cook on low for about 6 hours. When I got home, I added the ramen noodles for about 10 minutes and served immediately after. It's very hearty, great with a salad (and all the toppings of course). Wonderful with sriracha sauce added for some kick. My whole family loved it (the kids without the sriracha). I'm adding it to my monthly rotation.

Thai Cucumber Salad

There was too much sugar for me. I made it exactly as written (except I substituted Serrano peppers because I couldn't find jalapenos in Mexico City!). I will make again, but I will cut back on the sugar next time - probably half.

Slow Cooker Butter Chicken

This smells DELICIOUS when cooking. It's just that it's a bit bland, but nothing that a little sriracha can't fix. I followed the recipe (pretty much, add me to the group that doesn't think that slow cooker cooking should dirty extra dishes, so I just threw all the ingredients into the slow cooker). I am not a huge fan of cardamom, so I lowered the pods to 10 and it was still a bit overwhelming. I didn't add the yogurt until the last 30 minutes (when I turned the slow cooker to warm). I will definitely add it to my slow cooker recipes because it is tasty and easy.

Eggnog from Scratch

I made this with my Bialetti hot chocolate maker (heats it enough to make me comfortable, but not enough to cook the milk and eggs) and then I chilled it for about 6 - 8 hours. I prefer everything less sweet, so I used less sugar. Because I was making it for both drinkers and non drinkers, I left the rum on the side. Overall, I liked it and will make again.

My Favorite Sloppy Joes

Wonderful Sloppy Joes! I used fresh garlic but that was the only change I made. My husband's only suggestion was to use more meat next time. We just served it with carrots and ranch dressing.

Roast Sticky Chicken-Rotisserie Style

This is a kid favorite in our house! I made it exactly as directed the first time, but since then I leave out the cayenne as it makes it too spicy for the kids. Other than that, perfect! I have made it without leaving it in the fridge overnight too, with great results. I served with roasted potatoes and broccoli as those are favorites in our house too. And we throw all the bones and carcass into the crockpot to make overnight chicken broth!

Braided Spaghetti Bread | Rhodes Bake-N-Serv

My family loved this. I made Jo's Rosemary Bread dough from this site and baked the spaghetti with sauce and cheese in it. I minced garlic and shredded Parmesan for the topping of the bread. It was a hit with all the boys!

Italian Bread Bowls

Made the dough in the breadmaker and then let it sit to rise while the soup cooked. I served Butternut Squash soup IV from this site in it and my pickiest eater loved it. He ate all the soup and then devoured the bread too. It's not a very flavorful dough, but I think that's specifically what it's meant to be. That allows the flavors in the soup to shine through and also allows that any soup can be served in it. I may make again for chili!

Butternut Squash Soup II

I make this one about once a month in the winter time. We can buy assorted squash "for soup" cut up in the grocery store, so I have made it with all kinds of squash. I always make it according the recipe, but I add bacon bits at the end. I've also served it in Italian bread bowls from this site, which my kids thought was cool.

Red Velvet Cupcakes

My 8 year old son's favorite cake is red velvet cake and this is the recipe I use every year for his birthday. This makes wonderful red velvet cupcakes. I use buttercream frosting to frost.
