Spicy Cajun Chicken Breasts

Some of us cooks decided to trade recipes and I received this one. Presenting this to my husband, his first words were, "this is excellent!" I only used 1/2 teaspoon of the red pepper/cayenne pepper and it was spicy enough for me. The hardest part for me was trying to figure how out how to make the bread crumbs, something I rarely do. For sides I nuked some veggies and baked some onion rings and it was dinner! Very little clean up and a GREAT tasting meal!

Mom's Ground Beef Casserole

Good eats! I melted the processed cheese in the skillet with the meat and peppers. I basically added bits and pieces of cheese, processed and regular that I needed to use up to skillet. Could probably use a little more color but it was delicious! Hubby went back for seconds. Used up red and green pepper pieces that needed used up.

Chocolate Cupcakes

They tasted very good. The texture was super light, I'm guessing because of all the leavening. I had to bake for about 19 min in a convection oven, and the tops were a bit hard, which I covered with buttercream frosting. I think I would like a bit more texture in my cupcakes. It made 17. I was scared to fill the cups too full for fear of overflowing, so I filled them about 1/2 way.

Chocolate Surprise Cupcakes

I was VERY disappointed with this recipe! I dropped a spoonful of the filling in the middle and covered it with a bit more chocolate batter. When I cut into one, all that could be seen was a white line running through the chocolate cupcake. This was served to guests, but not totally consumed.

Colleen's Slow Cooker Jambalaya

I was in the mood for okra, so I looked up this recipe on my Android while in the grocery store! It gave me the ingredients I needed. I bought thighs and skinned them, (cheaper) cooking them in the crock pot along with the green peppers 3 hours on high. I cooked the rest of the ingredients in a pot and combined with the boned chicken thighs. I added okra. Hubby added the shrimp to his serving as I do not like shrimp. VERY GOOD! I served this in a bowl over rice.

Apple-Cinnamon Baked French Toast

I cut the recipe in half and used store made brat buns for the bread. I split them and put in the "boat" shown, with the apples on top. I felt if I had the apples on the bottom, the bread wouldn't get wet enough. It tasted more like bread pudding than French Bread. I had it on the "convection setting" for 40 minutes.

Italian Restaurant-Style Salad Dressing II

This was pretty good. I used a simple syrup (1/2 sugar and 1/2 water boiled) instead of the corn syrup, and used red balsamic vinegar. Also, I didn't have any Romano cheese, so I used all Parmesan. The red vinegar gave it an unusual color, but it tasted very good.

Garlic Cheese Bread

My husband is a big bread eater, but didn't care for this, eating only one slice. I toasted the bread under the broiler and then put the cheese topping on. What I didn't cover with the topping got too done, but the bread (rolls) still tasted OK. Topping was too soft for our tastes.

Easy Sugar Cookies

I must be doing something wrong, with all the 5 star ratings for these. Even though I used room temperature Butter Flavored Crisco, these cookie were CRUMMY! I increased the vanilla to 1.5 teaspoons. Dough had problems holding together. After test cooking 3 cookies on my GE Profile Advantium 120, at 350 for 7 minutes, they were crisp/tender, but I had to press the crumbs between the palms of my hands to get it to form a cookie. I added a second egg to the remaining dough and with the second batch in the oven, they didn't quite get done, broke apart semi baked. I am disappointed. They did puff a bit, which was nice.

Cranberry Crumble Coffee Cake

I made this recipe in a 9" cake pan. I put it in my GE Profile Advantium oven/microwave that fits above the stove. I didn't have the appropriate sized springform pan. I used vanilla yogurt instead of sour cream. It only took 35 minutes to bake and the top was slightly too dark. It overflowed the pan slightly. I had it on the oven setting so the only possible difference was possible convection. It tasted good, however it was something I scooped with a cooking spoon rather than sliced with a knife. Well received. Probably best served within 24-48 hours.

Diana's Hawaiian Bread Rolls

This was pretty good. I substituted one cup whole wheat flour for some of the bread flour. You'll probably need about 1 c more flour when kneading. I used 2 T of vanilla instead of 1T of lemon extract. If it didn't taste like the Hawaiian bread, it was probably my fault. Made more than 12 rolls, filled my cookie sheet. I baked for 20 minutes and could have probably used up to 5 more minutes. It was done, but they probably would have been brown if I left them in longer.

Beth's Spicy Oatmeal Raisin Cookies

Very good. I only baked mine about 8-10 minutes. One batch 8 and the other batch 10. They are soft and flavorful. I used craisins in case any of my guests don't like raisins. I make them into balls and freeze on a cookie sheet. I thaw and bake as needed. YUM!

Honey Wheat Bread II

It has been a long time since I've baked a loaf of bread. I started to make it, and realized I only had 1/6 c of honey! I added 1/4 c of artificial brown sugar as well as the honey. I baked it as directed in my GE Advantium 120 microwave/oven on the oven setting. The top got a little too brown and tiny bits of the bread wasn't done inside. I baked the second loaf at 360 degrees and got better results. Oven temps vary. Hubby ate 1/2 loaf the first day!

Corn Yeast Rolls

I was only able to incorporate 2 1/4 c flour into this recipe. I increased sugar to 1/2 cup. Also, I was able to make 14 rolls, and after having them in the oven for 15 minutes, they were done.
