Zesty Chicken Meatloaf

My whole family absolutely loved this. i didn't have ranch so i just used sour cream and added an extra Tbsp of salsa. Thanks for such a simple and tasty recipe!

Thai Peanut Chicken

i love this recipe. i make a variation of this at least once a week now: thai chicken lettuce wraps, chicken salad, and thai chicken pizza with the sauce, grilled chicken, bell peppers, and some hot chili paste. i do add a couple of tablespoons of water to the sauce to thin it out a bit and make it less salty. i love the versitility of this recipe!

Orzo with Chicken and Artichokes

i thought this was fantastic - i used turkey bacon and regular spaghetti since that's what i had and it was still perfect. thanks for sharing such a great recipe - it's always nice to add something new to the rotation!

No Bake Chocolate Oat Bars

i'm not a cookie person, but i decided to make these to take to a baby shower. i used a spring-form pan which made it easier to cut them without too much crumbling. i followed the recipe exactly -until the end. i had some extra white chocolate laying around so i melted that and drizzled it on top. and i cut them while they were cold. the only problem was that a few hours before the shower i realized that half the pan was gone (i'm going to blame my husband...). i didn't have quite enough oats so i used some shaved cocnut to fill in. used the white chocolate again on top. everyone at the baby shower loved them and wanted the recipe. the best part was that they were so easy and quick to make - i have twin newborns so anything that i can make while they're napping is a winner...

Cranberry Pistachio Biscotti

wow. these are amazing. and they were so much fun to make (once i finished shelling the pistachios). i let it cool for at least 15 minutes before i sliced it to avoid the crumbling. and i got about half of the serving amount. they taste great- i'm definitely making them again!

Oatmeal Peanut Butter Cookies

these were great cookies - and i am not a fan of peanut butter. for my second batch i decreased the salt and sprinkled sugar on top of each cookie about 5 minutes into baking. they turned out so well i even liked them. next time i'll try adding vanilla
