Skins got too burned on the grill (and I love to eat the skins). I do them in the oven - 400 degrees for the same time as the recipe.

Avocado Tacos

The cilantro was good with it, but other than that they are a little too bland for me. I didn't have jalapeno pepper sauce (maybe that was the problem) so I tried hot sauce.

Authentic Huevos Rancheros

Very good - nice change from just bacon and eggs. I fried the tortillas and the eggs in the bacon grease. First time I made them the food wasn't hot. So the next time after I assembled them (putting the cheese on the top which it doesn't tell you in the recipe) I microwaved each one for 30 seconds or until the beans bubble and the cheese melts. Then top with salsa if desired.

Six Can Chicken Tortilla Soup

Couldn't be simpler and it is delicious. Thought it was weird putting it over tortilla chips, but that was perfect. As others suggested I didn't drain the corn or the tomatoes and used one can of chicken broth instead of two. Used leftover chicken, but will try with whatever meat I have leftover.

Asparagus Cashew Rice Pilaf

Loved this. Very different and everyone I've served it to likes it. I use whatever pasta I have leftover and it's fine (I've used angel hair and I forget what else). I used chicken broth instead of vegetable because I buy it in bulk. Also I roast the asparagus and cashews in the oven at 450 degrees for 5-8 minutes.

Baked Seafood Au Gratin

I liked this, but I'm a seafood lover. Gave it to some friends who aren't seafood lovers and they ate it, but weren't crazy about it (wouldn't waste it on them again). Don't know how Katy made it in 20 min. - took me an hour and 45 min! Also I'd say it's more like 10-12 servings than 8 (it's very rich).
