Maple-Garlic Marinated Pork Tenderloin

I've made this quite a few times and have loved it each and every time! I did make a few substitutions as follows: stone ground mustard in place of dijon and light tasting olive oil in place of the sesame oil. I also baked the tenderloin in a moderate oven and watched the internal temp closely as not to overcook. With the leftover marinade, I threw it in a saucepan on the stove and reduced it so I could add it back over the meat after slicing. This recipe is a keeper in my book!

Ziti Chicken and Broccoli

Great yummy recipe! My family loved it, but I did make a few substitutions. Instead of heavy cream, I used 1% milk. I also sauteed the chicken in a little olive oil instead of breading and frying it. I used frozen brocolli that I thawed in the microwave and celletani as the pasta. I can't wait to make this again. I would recommend this recipe to anyone!

Almond Paste

I made this with good results following the original recipe. I used this almond paste in an almond shortbread recipe and no one could tell the difference.

Strawberry Oat Muffins

These muffins are fabulously moist and delicious! I decided to make these muffins because of the rolled oats. My 5yo son has borderline high cholesterol and oatmeal can help reduce it naturally and he will not eat just oatmeal. Firstly, I doubled the recipe because I have 5 children and 12 muffins wouldn't have lasted for more than 5 minutes in our house. I took some suggestions from the other reviewers and changed the recipe in the following ways: I substituted whole wheat flour for 1/2 the amount of regular flour; I used one mashed banana for 1/2 of the amount of oil; I added cinnamon along with the soda, powder and salt. If I had egg substitute on hand, I would have used that instead of regular eggs. I also used fresh cut strawberries. These muffins are delicious and so much more healthy than the standard fare...great source of fiber! Thanks for submitting such a different recipe for strawberries!

Creme de Pirouline

I'm not sure if it was just me, but I had a really hard time getting these thin enough even using a flat spatula & silpats. If they are not thin enough they end up being way too chewy. If they get too brown you have literally about 3 seconds to get them rolled before they become too brittle. The actual taste of the cookie was ok. I'm not sure I'll try these again.

Almond Cranberry Squash Bake

I wasn't sure if I would like this recipe because it sounded so different to me, but the sweetness of the squash, the tartness of the cranberries and the crunch of the almonds were a perfect match! This will definitely become a keeper for our Thanksgiving table.

Hot Cocoa Mix in a Jar

Italian Almond Cookies II

Very yummy cookies...I used my Kitchen Aid mixer with the flat beater to mix dough...much easier. I also chilled the dough and wet my hands with a bit of cool water before handling dough. I think when I make them next Christmas, I will probably make my own almond paste!

Texas Ranch Chicken

This was a very EASY & tasty dish! I took a suggestion from the other reviewers and used a bit of cooking spray to coat the pan rather than olive oil. I also used turkey tenderloins instead of chicken and used a Light Ranch dressing. My kids and husband devoured it and I will definitely be making this again!

Canadian Fried Dough from a Real Canadian

I made these for a project my son did on Canada. I don't know what they were supposed to look like or taste like because I have never had the "real" thing. I thought this recipe was easy and tasty...I probably will make again in the future!

Candy Cane Chocolate Chunk Cookies

Very easy and tasty cookie. I made the following substitutions: 1 c. butter flavor shortening sticks plus 6 tsp. water for the butter 1/2 c. of miniature milk chocolate candy bars chopped and 1/2 c. semi sweet morsels for the 5oz. choc. bar. I also used silpat lined pans to bake them on and had no trouble with sticking. This one is a keeper.

Whoopie Pies IV

Very good recipe - especially since we have a raw egg allergy and many of the other recipes call for egg whites in the filling. I've made the recipe twice now and I've used unsalted butter in place of shortening and have not had any issues with the frosting or cake. Also, the cake part rises much more if you let the batter sit a few minutes on the baking sheet before setting it in the oven.

Cottage Cheese Chicken Enchiladas

This was FABULOUS! I made this for my brother and sister-in-law for our monthly game night and dinner...RAVE REVIEWS! I did cut down on the fat by using non-fat cottage cheese and non-fat sour cream. You couldn't even tell the difference. I also used a lower sodium taco seasoning mix and made my own enchilada sauce. This has become a favorite with my hubby and my kids...tastes even better warmed up the next day!

Hashbrown Casserole

Delicious and very easy to make! I did make the following changes: 2 c. chicken flavored white sauce instead of the soup, I doubled the amount of cheese and also used crushed cheddar chex mix for the topping instead of the corn flakes. Will definitely be making this again!

Asian Ginger Grill Marinade

I used this recipe on chicken breasts. It was pretty good. I think it was a bit too sweet for my taste. If I make it again I will add some chili powder to give it a kick and even out the sweetness. The kids loved it though.

Two Ingredient Pumpkin Cake

I made this for Thanksgiving and Christmas this year, but I put the batter into mini muffin pans and baked at 350 for about 30 minutes. These are very sweet and do not have the consistency of cake because of the lack of eggs, but they still were yummy and my kids thought they were even better chilled the next day!

Chocolate Macaroon Cake

Holy Moly was this YUMMY! My husband and I fought over who would get the last piece! It was moist, chocolatey, delicious and just the recipe I was looking for. It was a bit time consuming to make, but well worth the effort. Thanks for such a yummy recipe - definitely a keeper in our house!

Rose Galletta's Ricotta Pie

I made this for a small family get together. Everyone loved it except me. I thought the texture was a little grainy and not like other ricotta pies I've had in the past. I think that maybe the egg substitute I had to use for dietary reasons could have been the cause. Other than the "grainy" texture, the pie tasted good.
