Italian Almond Cookies II

Very yummy cookies...I used my Kitchen Aid mixer with the flat beater to mix dough...much easier. I also chilled the dough and wet my hands with a bit of cool water before handling dough. I think when I make them next Christmas, I will probably make my own almond paste!

Hot Cocoa Mix in a Jar

Very good taste to this hot cocoa...added mini marshmallows to mine and made all my kids teachers some! Definitely great for gift giving!

Ziti Chicken and Broccoli

Great yummy recipe! My family loved it, but I did make a few substitutions. Instead of heavy cream, I used 1% milk. I also sauteed the chicken in a little olive oil instead of breading and frying it. I used frozen brocolli that I thawed in the microwave and celletani as the pasta. I can't wait to make this again. I would recommend this recipe to anyone!

Cottage Cheese Chicken Enchiladas

This was FABULOUS! I made this for my brother and sister-in-law for our monthly game night and dinner...RAVE REVIEWS! I did cut down on the fat by using non-fat cottage cheese and non-fat sour cream. You couldn't even tell the difference. I also used a lower sodium taco seasoning mix and made my own enchilada sauce. This has become a favorite with my hubby and my kids...tastes even better warmed up the next day!

Red Enchilada Sauce

Thank you so much for this AWESOME recipe! It came out absolutely beautiful and it was so easy. It also tasted sinful...couldn't even tell it was made with lower fat milk and egg whites!

Pecan Sticky Buns

These were very easy to make and did taste delicious! I used a 9x13 pan like others did, but the middle buns didn't seem to get cooked all the way (probably the cook's error). Definitely will make again. Family loved them!

Rose Galletta's Ricotta Pie

I made this for a small family get together. Everyone loved it except me. I thought the texture was a little grainy and not like other ricotta pies I've had in the past. I think that maybe the egg substitute I had to use for dietary reasons could have been the cause. Other than the "grainy" texture, the pie tasted good.

Canadian Fried Dough from a Real Canadian

I made these for a project my son did on Canada. I don't know what they were supposed to look like or taste like because I have never had the "real" thing. I thought this recipe was easy and tasty...I probably will make again in the future!

Candied Chicken Breasts

Texas Ranch Chicken

This was a very EASY & tasty dish! I took a suggestion from the other reviewers and used a bit of cooking spray to coat the pan rather than olive oil. I also used turkey tenderloins instead of chicken and used a Light Ranch dressing. My kids and husband devoured it and I will definitely be making this again!

Pecan Dijon Chicken

This was a very easy chicken dish to make and even better than that, it wasn't like all the other chicken dish recipes I have. I wasn't sure if my family or I would like it because of the pecans and glaze ingredients, but it was very tasty. I served it with rice and a salad and it will definitely take a space in my "quick and easy meals" recipes.

Strawberry Oat Muffins

These muffins are fabulously moist and delicious! I decided to make these muffins because of the rolled oats. My 5yo son has borderline high cholesterol and oatmeal can help reduce it naturally and he will not eat just oatmeal. Firstly, I doubled the recipe because I have 5 children and 12 muffins wouldn't have lasted for more than 5 minutes in our house. I took some suggestions from the other reviewers and changed the recipe in the following ways: I substituted whole wheat flour for 1/2 the amount of regular flour; I used one mashed banana for 1/2 of the amount of oil; I added cinnamon along with the soda, powder and salt. If I had egg substitute on hand, I would have used that instead of regular eggs. I also used fresh cut strawberries. These muffins are delicious and so much more healthy than the standard fare...great source of fiber! Thanks for submitting such a different recipe for strawberries!

Blueberry Boy Bait

Wow...This was a terrific recipe! I didn't have any butter thawed, but I substituted butter flavored shortening and I also added another 3/4c. or so of blueberries. My family loved this recipe and ate almost an entire 9x13 pan in one day! Very easy recipe to follow and clean up is minimal. My family and I thank you!

Oh my gosh! These were EXACTLY what I was looking for. They were light and fluffy on the inside and the taste was divine! I made them for my family for our Thanksgiving dinner and everyone gobbled them up. What little leftovers we had, the kids ate as snacks the next day! Thank you, Thank you! I will never buy packaged again :o)

Grandma's Apple Cookies

These were very yummy and a good way to use our fresh picked apples. I made them in bar form. The only issue I had was the bars came out VERY thin in my 13x18" half sheet pan. I did not use any dates or walnuts, but did add about 2 cups of apples instead. I also was out of ground cloves which I think would have added another layer of taste to these bars. I frosted them with a homemade caramel cream cheese frosting and the kids ate them up. Will definitely make them again.

Candy Cane Chocolate Chunk Cookies

Very easy and tasty cookie. I made the following substitutions: 1 c. butter flavor shortening sticks plus 6 tsp. water for the butter 1/2 c. of miniature milk chocolate candy bars chopped and 1/2 c. semi sweet morsels for the 5oz. choc. bar. I also used silpat lined pans to bake them on and had no trouble with sticking. This one is a keeper.
