Fluffy Pancakes

Let me start off by saying that I am pancake-challenged. If there were a remedial course in pancake making, I'd have to work my way UP to it. So if y o u struggle like I do, take heart! Even I couldn't mess these up! These were so yummy and fluffy. The only changes I made were to double the recipe but keep the salt at 1/2 tsp and add 2 tsp of vanilla extract and a splash more milk(my milk was Lactaid's fat free) after I saw my batter seemed a bit thick. Even my daughter who can take or leave pancakes ate these up!

Broiled Tilapia Parmesan

Orange Poppy Muffins

I am rating just the muffins as I did not make the spread. These were fantastic! I made a couple of revisions. I was out of sour cream so substituted vanilla yogurt I had on hand. I doubled the orange juice and zest to kick up the orange flavor a notch. The recipe was so easy my preschooler helped to make them. They were enjoyed by all in this house!

Double Layer Pumpkin Cheesecake

This was awesome! I made a few changes. I used the pumpkin pie filling as previously mentioned but also used the cinnamon, cloves and nutmeg. I also added in a 1/2 c of light sour cream and folded it in after the eggs. I was able to use Philadelphia cream cheese with 1/3 less fat and my cheesecake set up well. Lastly, I used a water bath to cook it set at 350 degrees for an hour and then let it cool with the oven cracked for an hour. I forgot to put the cool whip on but it was gobbled up regardless!!!

Zucchini Patties

These were sooo good! Instead of 1/2 c of flour I used 1/4 c seasoned bread crumbs and 1/4 c flour. These were so yummy. Everyone enjoyed them!

Chicken and Broccoli Alfredo

This was quite yummy. I doctored it a bit by sauteeing garlic in the butter and then adding chicken I'd seasoned very thoroughly (Adobo, garlic powder, onion powder, salt, cayenne, and black pepper) and then I added onion, and green and red pepper to the mix. Was a hit at our house!

Spinach Apple Salad

Grilled Bruschetta Chicken

This is fantastic! I could not locate the Kraft dressing. The closest I came to it was a Safeway brand Tuscan Italian Dressing. This was so tasty and so easy. I made it on my little tabletop grill. I served to my MIL who used to have her own cooking show and she loved it. I served it with spaghetti and the Strawberry Spinach Salad I recipe from here. I will add that the dressing (with my minor alteration) from the spinach salad also tasted wonderful with this chicken.

Strawberry Spinach Salad I

This was phenomenal-I did however make a couple of changes. I love balsamic vinegar so I substituted it for white wine vinegar. Also, I did not have sesame or poppy seeds on hand the first time out. Still great. Second time around I had poppy seeds. Didn't take away from the recipe but nor did I think it added additional flavor. My MIL said this was restaurant quality. It was a side along with spaghetti for the Grilled Bruschetta Chicken recipe (equally phenomenal) that I also got from here. What a great meal.

Potato Salmon Patties

I doubled this reciped and made a few changes. *Added 1/2 tsp Old Bay *Added 1/2 tsp Paul Prudhommers Magic Salmon Seasoning *Used 4 cheese flavored potato flakes **BAKED for 20 minutes at 375 degrees turning once*** These tasted awesome!

Indian Turkey Burgers With Lime, Cucumbers, and Chutney

This recipe was really very tasty!!! You must, must, must have the chutney. I had already chopped garlic on hand so that was my only substitution. Was great. Definitely making again AND sending to friends and family.

Chewy Chocolate Chip Oatmeal Cookies

This is the second time I've made these and the third time I've eaten them (sis made the first batch). They are awesome!!! Few modifications: used whole wheat flour and 2.5 cups of oats. Last time there were too many oats but that may just be my poor mixing skills... ;) LOVE LOVE LOVE this recipe

Grilled Delmonico Steaks

Fra Diavolo Sauce With Pasta

This dish was excellent. The crushed red pepper is what really makes it great. My husband usually prefers more saucy dishes, but he really liked this one regardless. I cheated and used a 12 oz. frozen bag of shrimp and nixed the scallops. I may try it with some tomato sauce next time though just to get a saucier dish.

Chicken Breasts Pierre

Very, very, very tasty. I took some suggestions and substituted white wine for the water. I also found it easier to cube the chicken. I did not have celery seed or mustard powder on hand but it still was very tasty. Next time, I may use more sauce.
