I am a stay at home mom and jewelry designer (Beads In The Belfry). I am a reluctant cook. My dream in high school was to marry a chef so I'd not have to cook. I love my husband but I do the cooking. lol.

Breaking spaghetti in half because neither I nor my mother has ever procured a pot that is big enough to keep it whole! ;D

Lasagna - it looked so intimidating but is fantastically easy (as long as I use no boil noodles. hee hee)

Fluffy Pancakes
Let me start off by saying that I am pancake-challenged. If there were a remedial course in pancake making, I'd have to work my way UP to it. So if y o u struggle like I do, take heart! Even I couldn't mess these up! These were so yummy and fluffy. The only changes I made were to double the recipe but keep the salt at 1/2 tsp and add 2 tsp of vanilla extract and a splash more milk(my milk was Lactaid's fat free) after I saw my batter seemed a bit thick. Even my daughter who can take or leave pancakes ate these up!

Broiled Tilapia Parmesan
I left out the mayo and had celery seed but no celery salt. It was fantastic!

Double Layer Pumpkin Cheesecake
This was awesome! I made a few changes. I used the pumpkin pie filling as previously mentioned but also used the cinnamon, cloves and nutmeg. I also added in a 1/2 c of light sour cream and folded it in after the eggs. I was able to use Philadelphia cream cheese with 1/3 less fat and my cheesecake set up well. Lastly, I used a water bath to cook it set at 350 degrees for an hour and then let it cool with the oven cracked for an hour. I forgot to put the cool whip on but it was gobbled up regardless!!!
