Amazing Chicken
I used this recipe for inspiration, then put my own twist on it. I crushed fresh garlic in the mayo and let it rest while I prepped the chicken. I used plain panko breadcrumbs and seasoned them myself using paprika, cayenne pepper, basil, oregano, onion powder, poultry seasoning, garlic powder and a fresh cracked pepper. The panko gets really crispy, almost like fried chicken without the deep frying! I've made it using chicken thighs as well. A great recipe when you're short on time!
