Zucchini-Lemon Sorbet

I had a friend give me a giant zucchini and was looking for some fun stuff to do with it. I was pretty excited to try this recipe, besides if I can get my little man to eat veggies for dessert I'm stoked. I made a few modifications to the recipe. I filled my blender with peeled and seeded zucchini, added 3/4 c lime juice, about 2 t lime zest and 1/2 c fresh local honey. Blended, strained and froze. I omitted the mint as I didn't have any on hand. It came out perfectly tart and very refreshing for the hot summer nights. Nicely balanced and my little man LOVED IT! Had a few other friends try it before I told them what was in it and the consensus came back with an astounding "NOM!" followed by "Really? Zucchini?" Definitely going to add this one to my recipe box!

Spicy Zucchini Oatmeal Cookies

Made a few modifications to these delicious cookies. Sub'd out 1/2 c whole wheat flour and 3/4 c AP, 1/4 c applesauce and 1/4 c butter, and 2/3 c milk chocolate chips for the raisins. Wasn't sure how they were going to come out. The dough had a weird consistency but they baked out great. Didn't really spread in the baking and came out very cake like. Brought them to work and everyone complained I didn't make more. Will make again, and again.

Chicken Broth in a Slow Cooker

Woo hoo! So easy and so delicious! Used the leftovers from 2 rotisserie chickens, and followed the recipe from there. Left in my slow cooker over night and woke up to yummy homemade chicken broth. LOVE IT!

Plum Tart

Holy goodness.... Had an abundance of plums I had to use and opted to try out this recipe. The plums I had were very ripe and very sweet so I went with the recommended 3T regular sugar in the filling, and topped with 1T raw sugar (larger crystals). It was a tart tart but hello... perfect deliciousness.... must put fork down...

Zucchini-Chocolate Chip Muffins

Made a few modifications to this. Apple sauce for 1/2 of the oil, and whole wheat for 1/2 c of the flour, also omitted the nuts. The resulting muffins were pretty delicious although pretty dense and a little dry. Next time I'm either going to oil the muffin liners on grease the pan as the papers stuck to the muffins. (Boo.) Would like to play with this one a little more. Pretty good though.
