Slow Cooker Southern Lima Beans and Ham

I am the author of this recipe. The Allrecipes cooks changed my original recipe up a little. I didn't use a hambone or meat from the hambone, even though a lot of southern cooks do. I use a ham hock, bacon, and even smoked deer sausage at times. If I use bacon, I add in the bacon drippings, too. I also use half chicken broth and half water when simmering. You can also do this on the stovetop. Just be careful and don't let the beans scorch.

Roasted Peanuts

My mom used this recipe plenty of times and it was great, but not reliable. Some would be overcooked if not stirred. The quickest method I have found is to microwave them for about 3-4 minutes in the microwave, then let them cool. They get crunchier as they cool. I do about 3 cups at a time in a microwaveable safe bowl.

Buffalo Chicken and roasted Potato Casserole

I am the original owner of this recipe and have another suggestion for those of you who love this recipe. Sriracha Buffalo Sauce will also work in this recipe. It's simple to make. All you need is 1 1/2 sticks of butter, 1/2 cup of sriracha sauce, and 1/4th cup of white wine vinegar. Melt butter and add in the other two ingredients in a saucepan. For another sriracha variation, You can sauté in butter, 1/2 cup of onions and 2 cloves of garlic until brown, then throw in 1/4th tsp of cumin, 1/2 cup of ketchup, 1/2 cup of sriracha sauce, and 1 tsp of soy sauce or fish sauce. Stir on low heat until well blended then use it in place of the buffalo sauce to soak the potatoes and the chicken. My boys love this variation also.

Slow Cooker Pumpkin Turkey Chili

I'm a Texan and we love our chili HOT, so when I decided to try this recipe, I was skeptical that we would like it. I had leftover turkey and since the weatherman was predicting ice and snow, my family wanted chili. So I searched Allrecipes and found this one with the interesting pumpkin addition. I had never heard of putting pumpkin or sweet potatoes in chili. That sounded insane. But wanting to try something new, I tried this recipe using my leftover turkey chopped up, sweet potatoes instead of pumpkin, and added more heat with jalapenos, Cajun seasoning, and chipotle chili powder. I also added a bag of frozen chopped onions and peppers and fresh cilantro. OMG! It was delicious. I had to stop my boys from eating it after 3 bowls each. I served it with just tortilla chips, nothing more on top as some suggested. If you are skeptical, try this and add your own flair to it. I even had to give the homemaking teacher at my school the recipe after she tried it. She was amazed at the flavor of the sweet and spicy blend. This will definitely become part of my chili rotation.

Slow-Cooked Fresh Green Beans with Bacon, Onion, and Red Potatoes

I am from Texas and love fresh green beans and red potatoes. I did this dish for Christmas dinner instead of the traditional green bean casserole. It was a hit! I'll be making this more often for sure.

Buffalo Chicken and Roasted Potato Casserole

This was my recipe and I made some shortcuts that weren't put in the original recipe. Instead of using the tobasco sauce, garlic powder, and paprika mix, I used a jar of HOOTERS hot wing sauce. I added some olive oil to it to keep it from burning and to coat the potatoes. Then baked them as the recipe states. Also, not having time to thaw and cube chicken, I used a bag of Fajita chicken pieces, precooked and thawed. It was perfect and took half the time.
