Vietnamese Fresh Spring Rolls
I didn’t use the fish sauce and I made my own dipping sauce. Great recipe. Not difficult. It takes a little practice to get the rolling down. The great thing about this is that you can add any of your favorite items to the spring roll. We love to use our Thai basil from our garden and load up the roll with that, fresh mint, a bit of spring salad mix, some matchstick carrots and thinly sliced red pepper. As you eat it, you feel like you are eating something good for you. I made extra so we can have it on hand as a quick and healthy snack.

Spinach Salad with Baked Goat Cheese
Warm goat cheese salad is one of my favorites. This was a nice base recipe for me and then I added what we like. I put together the salad with our choice of ingredients. For the goat cheese, I did use Panko bread crumbs. However, I mixed the bread crumbs with my fresh herbs from my herb garden. I chopped fresh basil, cilantro, oregano (really depends on what I have on hand) along with a little crushed black pepper, and a tiny bit of crushed red pepper. Makes a delicious goat cheese. For me, this made a nice recipe into something really great. However, that will depend on your own individual taste. It's also very easy to make.

Rockin' Oysters Rockefeller
Made this for my husband for a special dinner. He LOVED it. I tweaked it a bit based on our taste but great recipe. It can be a bit time consuming but not difficult to make at all. Very impressive looking when you serve the oysters. I added white wine when I sautéed the onions, garlic, spinach, and other spices. I didn’t find fontina cheese but substituted a bit of that with an Asiago cheese mixture. The wine and the mix of cheeses gave it a lovely flavor.
