Roasted Chickpeas

I only had a small can, I added some EVOO, homemade taco seasoning and baked at 425 for 40 minutes, and they were chewy, so I lowered to 300 for 1 hour, then turned oven off, let them sit for 2 hours while I went shopping. They needed some garlic salt...yummy! Hubby does NOT like chickpeas, I made him taste ONE...he liked it but he doesn't trust me (we've been eating healthier for several yrs!) I haven't and won't tell him they're chickpeas! lol

Roasted Brussels Sprouts

I just made them tonight to accompany my bbq pork t-loin strips and baked potatoes. I added onions along side the Brussels, which I like to top my baked potato with. These lil veggies are so caramelized and tasty. I will definitely make them more often, maybe add some cauli along side. I did cheat a little by adding a couple tablespoons of butter right at the end. Out of this world deliciousness! Thank you!

Garlic Mashed Cauliflower

I love cauli, so I knew I would like this recipe. However, please try next time to roast the cauli first; sprinkle evoo, garlic salt/pepper on 400d til it turns brown/crispy...then mash it and add the cream cheese and parm cheese to make it really creamy. You'll never eat cauli any other way! Yum!

Sausage Egg Muffins

I made 6 muffins, using above ingredients (but 6 eggs) and my home-made spicy sausage. Instead of onion, I added chopped chives (from garden), tiny cubed cheddar, splash of milk to make them juicy/fluffy and 1/2 cup fried sweet jarred peppers. Next time I will use chopped green chilies like I have once before. They're both good. Maybe I'll use them together with Monterey Jack instead of cheddar! Oh, I added a sprinkling of parm cheese on top. Hubby and I loved them. He's taking them to work for breakfast! Keeper!

Easy Homemade Pie Crust

Oh yes Chef John! This is the recipe I've used for years, and IT'S PERFECT EVERY TIME! I just make sure everything is cold, including bowls and utensils, etc. Definitely freeze 1/2 for another recipe. A KEEPER!! :)

Jelly Doughnut Cupcakes

I've made these before in non-stick MINI muffin pans. I didn't need paper liners. I put 1/2 batter, then about 1/2 tsp different jams and/or lemon curd, then batter. I sprinkled them with granulated sugar, then baked them. My family loved them!

Bacon, Egg and Cheese Sandwiches

I made this a while ago using my homemade pizza crust, and it was delicious. I would love to use the Pillsbury crescent rolls for convenience as well as flavor, but I won't use bleached flour breads EVER!

Happy Shrimp

Made this tonight. It is now my 'go to' shrimp dish. I didn't have tomatoes or basil, but I had tri-color bell peppers/onions. I also added fresh nutmeg (always to any cream sauce). I made twice-baked potatoes...hubby doesn't care for rice. But next time, I will make extra sauce...we're having this over RICE!! The sauce was to die for! This dinner was fabulous, fast and easy! Thank you! I can't believe I made this tonight, this time with fresh garden tomatoes over angel hair, and we did NOT like it!!! I'm still keeping 5 stars, because the first time was the best. I guess the tomatoes ruined it, made it kind of sweet, I just don't know!

Donut Muffins

I just made these...house smells divine! They were easy to make and so delish! I made 12 w/strawberry preserves and 12 plain. While the plain are good just as they are, I really love preserves in them. Just put about 1 tsp or so of batter in muffin pan, 1/2 tsp jam, and another tsp of batter. It doesn't matter if it looks messy. It will bake just fine, I promise! And I AM NOT A SEASONED BAKER!! What an easy dessert for busy holidays or just an after school treat! If you have young children, they could certainly help with the dipping! I've already had 4! I had to see if they were done, right? lol

Fettuccine with Sweet Pepper-Cayenne Sauce

Made this for our Meatless Monday...fantastic! I just added my touch: some frozen peas, scallions, fresh nutmeg, 2 wedges of Light Laughing Cow swiss cheese, shredded Pecorino Romano, only 1/4 tsp cayenne (hubby!); mixed lite sour cream w/1 tsp flour (so no curdling) and fresh linguine. I can't wait to make it again for Fish Friday, adding shrimp! Hubby and I both said KEEPER!!!!

Mom's Buttermilk Pancakes

I read the ingredients on what I thought was a healthier boxed version for pancakes, saw it had "bleached" flour and threw the box in the trash! We don't have pancakes very often, but I knew I had to find a healthy, delicious and easy recipe! This is a good one. I knew 1 tsp salt was too much for this amount of batter, so I cut it that in half. Didn't have buttermilk, made my own, added 1 tsp real vanilla extract. I made the batter yesterday, had the pancakes this morning with unsalted butter and real maple syrup!! Keeper! Tweak it yourself if you like, have fun with a basic good recipe. I will add melted coconut oil along with the butter next time, maybe mix 1/4 c each of coconut flour and whole wheat flour to the basic recipe! I'll let u know how it turns out!

Sammy's Stuffed Bell Peppers

My hubby loves my stuffed peppers. Tonight I used red peppers (on sale), microwaved a couple of minutes. Hubby likes the peppers really cooked. Then I stuffed them with a "meatloaf" mix of beef, pork, veal, breadcrumbs, egg, onions, cooked brown rice, little marinara, and of course FRESH GARLIC! Baked 350 for 20 minutes, then top with mozzarella and romano cheeses, bake 10 more minutes. Add extra marinara on top if needed.

Caraway Dill Bread

This is a very good recipe. In response to pomplemousse, when you add fennel, that will overpower ANY AND ALL FLAVORS! and will taste like Italian sausage...lol!!! The dill and caraway gives it a traditional almost rye bread flavor...which is quite delicious. When using a bread machine, select a light crust or it will be too hard and crusty.

Bill's Blue Cheese Dressing

This is the same recipe I've been using for several years, and it is FABULOUS! No added preservatives etc. ingredients you can't pronounce! You will never buy store bought again. Takes just minutes to make. I do add a touch of fresh garlic. Yummy!

Hamburger Steak with Onions and Gravy

I've been making this recipe for years but called it Salisbury Steak, served w/mashed potatoes and a veggie or salad. It's a keeper. I wouldn't change one thing! Yummy!
