Fish Tacos

Reviewed: Mar. 3, 2015
This was good but a LOT of prep work ahead of time and during. I had another couple in for dinner last night and we could not all eat at the same time. Maybe I should have done more fish and put in a low oven until there was enough. Many compliments tho so well worth it. I wish the tortillas had been more crisp, but that could have been the brand I chose at the store. They were sort of limp and tore easily.

Michael's Foccacia Bread

Reviewed: Mar. 2, 2015
This was very very good except for too many onions in my humble opinion. I realize that this would be bread to use at a meal but if you want to use it for breakfast, it would not be very good with peanut butter on it:-) I would either sauté the onions next time or possibly eliminate all together. I put mine on a flat cookie sheet and pressed it all the way out to the edges. I worked out fine. I also didn't have fresh rosemary so had to use dried. I liked the texture a lot. I just had the kitchen aid do all the kneading.

Kalua Pig in a Slow Cooker

Reviewed: Feb. 1, 2015
I used an 8# shoulder roast. Started it at 4:30 p.m. It was done by midnight but left it as recipe states. Shredded it about noon the following day, came apart very nicely. Quite a bit of 'stuff' that I removed and sent out to the cats. Very nice flavor and super tender and moist. I had a hard time finding the Hawaiian salt. Found it in our local food co-op and it was the red one and it stated that it was the main ingredient in Kalua Pig! I knew then that I was on the right track. I will make it again. I also found the Hawaiian rolls. Can't wait to try the sandwiches.

Creme Brulee French Toast

Reviewed: Jan. 26, 2015
I thought this was very good and a fancy looking dish to serve guests or family. I made it in a smaller pan so reduced all amounts accordingly.

Roasted Vegetables

Reviewed: Oct. 6, 2014
Wonderful. I didn't have sweet potatoes but just went with what I had. I used another type of squash too. Just remember to cut vegetables according to length of time needed to cook. I am sure fresh herbs are the best but I had to use dried rosemary and chopped it up more and used about 1/2. My husband liked it a lot too. Will make again.

Grilled Salmon I

Reviewed: Sep. 24, 2014
very very good. I didn't have time to marinate it as long as it said but still liked it a lot. I also took the advice of others and used the dill sauce.

Tomato, Basil, and Feta Salad

Reviewed: Aug. 20, 2014
very good. I used my heirloom garden tomatoes in various colors and a regular onion since that is what I had on hand. I didn't use as much basil based on other reviews.

Fresh California Salsa

Reviewed: Aug. 10, 2014
this was pretty good. followed the suggestion to add some white wine vinegar. would make again but would also let some of the tomatoes 'drain' a bit before adding to the mixture. I like mine a bit thicker and not so 'wet'.

Ratatouille

Reviewed: Aug. 10, 2014
Very very good. I must confess, I made my version by starting out with Italian sausage for a more hearty main dish. Everything else was according to the recipe. It was awesome. I also sautéd the onions prior to constructing. I did the layering as suggested in the recipe. Will make again. It was pretty time consuming to do all that chopping and slicing but worth it.

Fresh Corn and Zucchini Saute

Reviewed: Jul. 28, 2014
This was very good. I started with the onions, then the zucchini and a bit later added the corn so it would stay crispy. We had company over and we all really liked it as a side dish. Also very pretty. I used some fresh basil as suggested by another reviewer.

Pesto Pasta with Chicken

Reviewed: Jul. 22, 2014
I had roasted a chicken and cut it up for a different dish and when I found this recipe I thought I would do it instead. Very good. I had put fresh dill into the chicken (other recipe) but that didn't hurt anything. I also used Classico pesto and used all of the 8 ounce jar. Will likely make again.

Mediterranean Kale

Reviewed: Mar. 24, 2014
I thought this was pretty good and will likely make again. I did substitute home made raspberry vinegar for the lemon juice. I sauted the garlic briefly to mellow the flavor a bit.

Chef John's Pasta Primavera

Reviewed: Mar. 16, 2014
Very good. I didn't have everything but went with what I had and it was awesome. I will try it again when I have it all. I did add some broccoli and little sweet peppers along with asparagus and snow peas. Wonderful. The chopping up takes longer than anything. Worth the trouble.

Butter Rich Spritz Butter Cookies

Reviewed: Dec. 16, 2013
Very tasty but I did go a little light on both flavorings because of some other reviewers. Maybe didn't need to since I only use Watkins flavorings which are hard to beat. I did find the dough a little stiff to go thru the press. Had a little better luck with another recipe on this site. Probably should try it again and just add a tad more butter and even try the full amount of flavorings.

Rachel's Tomato Basil Soup

Reviewed: Sep. 25, 2013
This was fine and I did it 'mostly' as written. I did use fresh picked tomatoes out of my garden instead of canned and home made tomato juice. I used 1/2 and 1/2 since my heavy cream was outdated. I think there are better soup recipes out there.
