Tomato, Basil, and Feta Salad

very good. I used my heirloom garden tomatoes in various colors and a regular onion since that is what I had on hand. I didn't use as much basil based on other reviews.

Fresh California Salsa

this was pretty good. followed the suggestion to add some white wine vinegar. would make again but would also let some of the tomatoes 'drain' a bit before adding to the mixture. I like mine a bit thicker and not so 'wet'.

Ratatouille

Very very good. I must confess, I made my version by starting out with Italian sausage for a more hearty main dish. Everything else was according to the recipe. It was awesome. I also sautéd the onions prior to constructing. I did the layering as suggested in the recipe. Will make again. It was pretty time consuming to do all that chopping and slicing but worth it.

Fresh Corn and Zucchini Saute

This was very good. I started with the onions, then the zucchini and a bit later added the corn so it would stay crispy. We had company over and we all really liked it as a side dish. Also very pretty. I used some fresh basil as suggested by another reviewer.

Pesto Pasta with Chicken

I had roasted a chicken and cut it up for a different dish and when I found this recipe I thought I would do it instead. Very good. I had put fresh dill into the chicken (other recipe) but that didn't hurt anything. I also used Classico pesto and used all of the 8 ounce jar. Will likely make again.

Rhubarb Sauce II

Mediterranean Kale

I thought this was pretty good and will likely make again. I did substitute home made raspberry vinegar for the lemon juice. I sauted the garlic briefly to mellow the flavor a bit.

Chef John's Pasta Primavera

Very good. I didn't have everything but went with what I had and it was awesome. I will try it again when I have it all. I did add some broccoli and little sweet peppers along with asparagus and snow peas. Wonderful. The chopping up takes longer than anything. Worth the trouble.

Butter Rich Spritz Butter Cookies

Very tasty but I did go a little light on both flavorings because of some other reviewers. Maybe didn't need to since I only use Watkins flavorings which are hard to beat. I did find the dough a little stiff to go thru the press. Had a little better luck with another recipe on this site. Probably should try it again and just add a tad more butter and even try the full amount of flavorings.

Rachel's Tomato Basil Soup

This was fine and I did it 'mostly' as written. I did use fresh picked tomatoes out of my garden instead of canned and home made tomato juice. I used 1/2 and 1/2 since my heavy cream was outdated. I think there are better soup recipes out there.

Tomato Mozzarella Salad

Very good. I used sweet little cherry tomatoes, sliced in half. Some red and some yellow and little mozzarella pearls. Very pretty and very tasty.

Best Ever Banana Bread

I didn't have enough bananas so subbed some home canned applesauce and some yogurt. I also added vanilla. I think most baked things benefit from it. I doubled the recipe and put nuts into one of the loaves. Very good

Lazy Bruschetta

I have not made this yet but plan to do so. I too think a tablespoon of garlic salt is an incredible amount for 1 tomato. If it is supposed to be garlic powder, that would be an overwhelming amount also. Maybe they really mean a teaspoon which is 1/3 of a tablespoon of course.

Crab Bites

This was very good. I used 1 1/2 packages cream cheese and 1 6 oz can crab and about 1/2 jar of artichoke hearts. I also used some garlic, Old Bay and hot sauce. Big hit for the Superbowl party with friends.

Taco Pie

This is in the oven so have not tasted it yet but just know it is going to be good based on the ingredients. I added most of a can of chopped black olives. The only thing that I question is all those chips. I had an 11 oz bag, not a 14 oz bag and I thought it was A LOT OF CHIPS but I put them on and am hoping for the best. UPDATE!! It was very good but I wouldn't put that many chips on next time. I made it in a 9x13 pan and 1 1/2 pound of ground beef. My husband who never complains but he complimented this dish 5 or 6 times! Wow, he was impressed, so I will probably make this often. thanks

One-Dish Beef Stroganoff

Very good and easy. I used 1 1/2 pounds of ground beef, because that is what I had ready to use. I added some Worchester sauce and some Lowry's seasonings. I am sorry to say that I did not have any mushrooms on hand so had to do it without. I didn't have the canned soup but used Watkins soup base and I am sure it was just as good. Got compliments and requests for the recipe at church.
