Red Beans and Rice Burgers

There didn't seem to be anything to bind these together to make them stay into a patty. I thought they tasted OK, but the hubby said he had to drowned his in ketchup and tomato. I will probably not make this again.

Pulled Chicken Sandwiches

I rated this 4, because after all my tweaks to the barbecue sauce and adding a bottle of barbecue sauce it tasted great! I served them on wheat buns. I cooked the chicken in my crock pot all day with my the barbecue sauce from the recipe which I doubled and altered. It didn't have enough flavor so after shredding the chicken and before serving, I added a bottle of BBQ sauce.

Barbecue Sauce for Pulled Chicken Sandwiches

This was bland. I had to double the recipe and had to add many additional ingredients including some Maker's Mark 46. After cooking the chicken in it, I had to add a bottle of BBQ sauce.

Fajita-Ranch Chicken Wraps

This was tasty. I did add some black beans that I heated separately and fresh mushrooms that I added to the chicken and onions for longer cooking. Also tried grape seed oil instead of the oil the recipe called for-no change to the flavor detected. Also used whole wheat wraps.

David's Yellow Cake

I used this recipe in a boston cream cheesecake recipe that calls for a boxed yellowcake mix. I found this absolutely delicious! I only used half, so with the other half of the mix, I added some corn starch and baking soda in hopes of ensuring my cupcakes formed a dome. They didn't. I added coconut and cut up mandarin oranges. I then topped them with homemade butter cream frosting with real fresh squeezed mandarin juice and orange flavoring. They were great!

Herbed Chicken Nuggets

Not my favorite recipe, but they were okay. I didn't find it important to cut my pieces uniformly which didn't matter. My husband thought they tasted even better the next day. I didn't use the wheat germ indicated in the description.

Scallops with Orange and Honey

I liked the recipe, but think next time I would double the ingredients for the sauce as it just didn't seem like enough. I rated it a 2 because I made it for my husband and he thought it wasn't flavorful enough. I think I will additionally add fresh ginger next time to give it a bit of a kick. We put the scallops and sauce on top of chinese egg noodles.

Herbed Chicken Nuggets

Not my best homemade nuggets, but they worked. I did not use the wheat germ - I swapped it for more bread crumbs. I am not sure how big the chicken breasts are for others, but$four would be way to much for the amount of breading.

Asian Beef with Snow Peas

Was a good recipe. I don't personally like peas too much, which is the reason for the lower star. My husband likes them and enjoyed the dish. I took the advice of another reviewer and doubled the "sauce".

Grilled Asian Ginger Pork Chops

These were absolutely delicious! We were able to marinate them overnight. I also cooked some read onions with them in my pan as we were unable to grill them. Also served with a side of long grained brown rice.

Do not attempt to substitute canned oysters for Mussels when you cannot find them. NOT a good substitution! I posted a pic of the end result which looked more like a soup.

Spicy Garlic, Ginger and Pepper Shrimp

I altered the recipe for four servings. I substituted the veggie oil with olive oil and reduced the amount to four tablespoons. I added two tablespoons of fresh minced ginger which I added with the garlic during cooking. As suggested by another, I added some frozen mixed veggies-broc, caul, carrots, snow peas. I steamed them in their bag in the microwave and added them at the end. I also reduced the red peppers to one teaspoon. My hubby added more peppers to his plate as desired. Also served with a side of long grained brown rice. A meal we will have again.
