Peruvian Cilantro Rice
Here are my changes. I seasoned my chicken with sazon, minced garlic, cumin, seasoned salt and red pepper flakes. I then stir fried the chicken in olive oil. In a blender I added fresh cilantro, water and beer. I poured my cilantro mixture with my jasmine rice, added some butter and left it to steam. Once completed I added it to my chicken along with carrots, peas and broccoli and topped it with sliced red pepper. The family loved it!

Low Fat Apple Bran Muffins
I absolutely LOVE this recipe!. After reading some of the reviews I made some changes....substituted the buttermilk with fat free vanilla yogurt and fat free milk. I also added some raisins, cinnamon, nutmeg and vanilla extract. The batter seemed a little thick so if you want to go this route you may want to add just a little over 1 cup of yogurt and watch your muffins because 16-18 minutes may be just a tad bit too long for them to stay in the oven. Will definately make this again!

Nadine's Delicious Tilapia
Super easy dish, my family loved it! I added sesame oil to the soy sauce egg mixture and it came out fantastic! served with mini yukon gold potatoes and veggies!
