Chef John's Stuffed Peppers

My husband loved this recipe. I thought it was just OK. I roasted my peppers (cut sides down) in a 375 degree oven while the rice cooked to make them more tender. I liked the combination of Italian sausage and ground meat, however if I make these again, I think I will use sweet Italian sausage to make the flavor a little milder.

Maple Cajun Mahi Mahi

This was a quick and simple dish to prepare. I didn't think that I had enough sauce for the two filets but the amount was just right. While not a dish I would make for company, it was a good week night dinner. Very tasty.

Sour Cream Burgers

We loved these burgers. They will be my "go to" burgers from now on. They are easy and flavorful. I followed the recipe but I added 2 tablespoons of Worcestershire and my husband brushed them with same when he put them on the grill.

Flavorful Flounder For the Oven

Delicious! And easy! What more could you want? I prepared this dish just as the recipe directed for company. . We all thought it was excellent, just be ire that you dry the filets after rinsing.

Corn and Crab Bisque

Wonderful! I followed the recipe exactly except I substituted half and half for the whole milk (1 cup of half and half). My husband loved it and so did I. Serve it with warm French bread.

Mexican Shrimp Cocktail

I first had a Mexican shrimp cocktail at a small neighborhood restaurant in Dallas. I wanted to serve one like it at a dinner party. I tried this recipe and it was awesome. My guests loved it. And I loved it because it was so easy. I served it in Margarita glasse. The only change I made was to reduce the horseradish by half.
