Meat Filled Manicotti

Reviewed: Jan. 9, 2005
Didn't find that this manicotti was very flavourful, but the filling was easy to prepare, so it's definitely a good base. Will try again, but will play with the seasoning next time.

Homesteader Cornbread

Reviewed: Nov. 27, 2004
I didn't find much flavour in this cornbread. The texture was bang-on, but it wasn't sweet and didn't really taste like anything... I made individual loaves instead of one large loaf. I think final cooking time in the mini-loaf pan was somewhere in the 18-minute range...

Classic Spanish Sangria

Reviewed: Oct. 9, 2004
Perfect just the way it is! I did add some halved strawberries and black cherries, but that's just me. Would make this again in a heartbeat.

Penne with Spicy Vodka Tomato Cream Sauce

Reviewed: Jun. 29, 2004
We really liked this sauce a lot, but I found it to be a bit heavy with the whipping cream -- I'd suggest using a lighter cream for this recipe just to thin it out a little. Followed JDOWNING's suggestion of starting the recipe with pancetta and omitting the oil and salt, but instead of pancetta (which I couldn't get at my local store), I used regular bacon... Excellent! Just make sure you drain the bacon and sausage really well before you add any other ingredients. As for the individual who suggested that doubling the recipe would be better for 4 servings -- Whoa, buddy! I doubled it thinking I wouldn't have enough for myself and the five people I had for dinner, and I ended up serving only half of what I made. I'd say the original recipe serves 4-6 just fine...

Guacamole

Reviewed: Jun. 12, 2004
I used a couple of tablespoons of salsa in place of the tomatoes. Loved the cilantro flavour!

Savory Cinnamon Rolls

Reviewed: Mar. 21, 2004
This was the first time I'd attempted cinnamon rolls, and what a great way to start! Simple to make and far too easy to eat...! The frosting is by far the best I've ever tasted; quite sweet, but delicious. My only complaint was that there wasn't a ton of cinnamon flavour, and no drippy, gooey cinnamon-sugar concoction oozing from the rolls (my favourite part!). I'll definitely use the recipe for the dough and for the icing, but will probably tweak the cinnamon-sugar mixture by using about 2 to 2 1/2 cups of brown sugar in place of the white and increasing the cinnamon significantly as well. Beyond that, these were excellent! Thanks, Jamie.

Winter Fruit Salad with Lemon Poppyseed Dressing

Reviewed: Dec. 24, 2003
Excellent! I used Havarti because I don't like Swiss, but I think any mild hard cheese would work in this recipe. The Lemon Poppyseed dressing is now a favourite, and I often make it for regular salads as well.

Candy Cane Cocoa

Reviewed: Dec. 14, 2003
A nice change from the old standard, but not spectacular. Make sure you use whole milk -- I tried to get by with the skim milk I had on hand, and it just wasn't quite right.

Grilled Caribbean Chicken

Reviewed: Nov. 23, 2003
Marinade didn't seem to do much for the chicken --I could hardly taste it! If I prepare this again, I think I'll follow the advice of some other reviewers and boil the remaining marinade down to a glaze for serving.

Vermont Apple Pie

Reviewed: Apr. 30, 2003
Now this is apple pie! Deliciously sticky and sweet, the filling was outstanding! I even forgot to put the butter on top (didn't realize my mistake until the crust was sealed), but it was fantastic. Served it to three friends for dessert one night, and we finished it all in one sitting. Thanks, Pame!

Ground Beef Shepherd's Pie

Reviewed: Apr. 13, 2003
Bland, bland, bland. Although I took others' suggestions and added salt, pepper, worcestershire sauce, onion powder, etc., I couldn't put any life into this recipe. I did like the addition of an egg to the mashed potatoes -- it really does puff them up -- and I will make this addition to any other Shepherd's Pie recipe I try in the future.

Grandma's Lemon Meringue Pie

Reviewed: Apr. 13, 2003
I've tried this pie twice now, and it's still just okay. The first time, I followed the recipe to the letter, and while the pie was fine, it wasn't tart enough for me -- in fact, there wasn't much lemon flavour at all. The second time, I added the juice and zest from three lemons instead of two, which should have worked just fine, but I also made the mistake of substituting milk for the water, a suggestion made by other reviewers. I will never, ever add milk to a lemon meringue pie again. It ruined the consistency for me entirely. In all, this pie was easy to make, and if that's what you're looking for in a lemon meringue pie, this is the one for you. Personally, I'd rather put in the extra effort for a really smashing pie.

Apple Pie I

Reviewed: Apr. 11, 2003
This is the first fruit pie I've ever made, and although I cheated and used frozen pie crusts, it was delicious. Like other reviewers, I added 1/4 to 1/2 tsp. nutmeg, and 2 Tbsp. flour to the sugar mixture. I also tossed the apples in the sugar mixture instead of layering it. So simple to make, I might even try my hand at homemade pastry next time!

Best Ever Beef Stew

Reviewed: Apr. 11, 2003
This is a basic stew, so while not spectacular, it's a good starting point. I was a little skeptical of the 6 cups of beef broth (I like my stews thick), so I simply dissolved 2 beef bouillon cubes into one cup of water, and added that in place of all of the beef broth. I cooked this in my slow-cooker on high heat for 8 hours.

Mmm-Mmm Better Brownies

Reviewed: Apr. 11, 2003
These were great! Not too sweet, but these packed enough chocolate flavour to make me and my chocoholic roommates very happy! My only criticism is with the thickness of the brownies -- I just like them to be higher. I think next time I'll use an 8x8" pan and fiddle with the time/temperature until I get it right. Thanks, Sarah!

Jay's Signature Pizza Crust

Reviewed: Mar. 21, 2003
I've never made pizza dough before, and this couldn't have been easier! Once baked, the crust was nice and crispy on the outside, and perfectly doughy on the inside. Thanks, Jay!

Oat Bran Muffins

Reviewed: Mar. 21, 2003
I was looking for a match for my favourite coffee-shop oatbran apple muffins... These weren't it. I added cinnamon and diced apples to this recipe, then sprinkled cinnamon sugar on top before baking, but I found these weren't moist enough and weren't very flavourful, even with the addition of cinnamon. I might try these again, but I'll tweak the recipe a bit more to get them the way I want them.

Beef Stroganoff III

Reviewed: Mar. 21, 2003
Great! The wine adds a really nice flavour. Although my old recipe tasted even better the second day, I didn't find that this one did -- it seemed to lose some of the flavour. Leftovers won't be a big concern with this dish, though -- everyone loved it so much that I doubt there will be any on most occasions!

Chocolate Cheese Frosting

Reviewed: Mar. 14, 2003
My family didn't like the tanginess of the cream cheese -- the most common comment was "it tastes sour". However, the consistency and colour was wonderful. I'd recommend this recipe to anyone who is tired of those way-too-sweet chocolate icings.

Best Big, Fat, Chewy Chocolate Chip Cookie

Reviewed: Mar. 4, 2003
A bit too sweet for my taste -- It was a shame to see such beautiful cookies go to waste because no one could finish a whole one. I will definitely make them again, but I'll make them smaller by dropping them by the tablespoonful, and may omit up to half of the chocolate chips. Other than how sweet they were, I found these to be the very best cookie ever as far as appearance and texture go. Thanks for the great recipe, Elizabeth!
