Best Breakfast Cookie

Added a little apple sauce with the prune puree and chocolate chips. Baked for about 12 minutes and they are still chewy. I would also like to try pumpkin or honey flavors which I think would complement the other flavors in this cookie.

Sweet Sourdough Cookies

This is a very wet dough. I had to drop spoons full of the dough into sugar and cinnamon to make snickerdoodles. They spread a lot in the oven so make sure you leave plenty of room on your baking sheet. I am going to try adding a half cup of flour next time.

Graham Griddle Cakes

These are very tasty. My 1st grader loves to have one before school in the morning. I make them ahead of time, freeze them and then thaw one in the morning for breakfast. I like to serve them with honey butter.

Whole Wheat Honey Bread

I make this once a week for sandwiches. It is soft, tasty and has no high fructose corn syrup like most store bought brands. I use the dough cycle on my bread maker and then bake it in the oven. It comes out perfect every time.

Slow-Cooked Country Ribs in Gravy

This is a good recipe but I made a few changes. I did not add 1 cup of water. Instead I only added enough water to moisten the bottom of the dish. The ribs will give off liquid of their own and you will have plenty of gravy. Then, I added smoked paprika during the cooking and a few drops of liquid smoke right before serving. They added smokey depth which my family loved.

Roasted Tomato Salsa I

This is a great recipe to use tomatoes from the garden. Make the recipe as directed or omit the cilantro and add Italian herbs for a great pasta sauce. This sauce freezes well too.

Playgroup Granola Bars

Used whole wheat flour, apple sauce instead of oil and corn syrup instead of honey. I cut the sugar to 1/2 cup and added craisins and mixed nuts. The granola bars were tasty and chewy and will make for nice snacks on the family camping trip.

Easy Focaccia

I put the ingredients for the dough in my bread machine and set it for the dough cycle. Then I minced shallots, garlic, rosemary and thyme and mixed together with grated Pecorino Romano cheese and some olive oil. I spread this mixture on top of the dough and let it rise for about 30 minutes before baking. It was very flavorful and people at my church potluck loved it. I will be making this again and again. I loved it.

Cinnamon Rolls II

The bread is lighter than some cinnamon roll recipes I have tried which is really nice. The only change I made was to use the filling from the Clone of a Cinnabon recipe. I took them to church for breakfast and everyone loved them. This is my new cinnamon roll recipe.

Creamy Pesto Shrimp

I like this recipe but I tweaked it to cut some fat. First, I cut the butter to two tablespoons and and one tablespoon of olive oil. I sauteed the shrimp first in the butter olive oil mixture and removed it from the pan. Next I added only one cup of half and half because I like a stronger pesto flavor. I added the cheese and pesto as the recipe states and reheated the shrimp in the sauce right before serving. My 5 year old ate every bite of his dinner and he usually doesn't like sauce on his pasta. This recipe is a keeper.
