Cream Cheese Frosting II

This was a perfect frosting for my carrot cake. I added just a touch of half and half for spreadability, but I'm wondering if I needed to. It's a rich and creamy frosting.

Mushroom Risotto

Delicious risotto. I sauteed the arborio rice for a minute or so, since I always do before adding liquid. Then I deglazed the pan with 1/4 cup white wine. Also, I fried about an ounce of salt pork with the onions at the beginning, and left out the celery. I really think these were minor changes, and didn't change the recipe all that much. My whole family loved it.

Sweet and Spicy Sweet Potatoes

These are WONDERFUL! I find if I don't follow the recipe, though, they either get too sweet or much too spicy. As written, it's the perfect balance.

Carrot Cake XI

Best carrot cake I've ever made. I cut the veg. oil down to 1/3 cup, and added 1 cup unsweetened applesauce instead. The cake came out moist and delicious. I also added maybe a teaspoon of ginger along with the cinnamon. My family didn't want to stop at one piece!

Chantal's New York Cheesecake

I think this is a wonderful recipe. This was my first time ever making a cheesecake, and I followed the recipe as exactly as I could. My cheesecake did crack a bit, but I think it was because I couldn't help myself from opening the oven door to peek. Anyway, the flavor and texture were heavenly. My whole family wants this again soon!

Funnel Cakes IV

These are soooooooo good! I added vanilla and probably doubled the sugar. I didn't use any sort of funnel, just tried to pour a steady stream into the hot oil, so I had some consistency problems (some lumpy, chewy parts, some thin, crispy parts). Nevertheless, my family gobbled them up in minutes! But they're so easy, I could whip up a second batch before they knew it.

Dixie Pork Chops

This was wonderful. I followed the recipe exactly. Since it didn't say what to do with the sage, I dusted it on the chops after I browned them in the pan and put them in the baking dish. I will definitely be making this again.

Posh Squash

I was not convinced that this recipe would be any good, but my husband wanted a savory squash for Thanksgiving, and this seemed the easiest with ingredients I had on hand. I was very pleasantly surprised! The squash is light and tasty. I omitted green pepper, because I don't care for it. But it's a wonderful alternative to the standard sweet squash recipes.

Easy Alfredo Sauce I

Mine didn't turn out quite as smooth as I wanted, but the cheese wasn't exactly ultrafresh...it was a little grainy. I added a little garlic oil as I melted the butter. I also didn't have whipping cream, so I used a combination of half-and-half, and milk thickened up with powdered milk. I think it came out wonderfully considering all of my weird substitutions, and my whole family thought the flavor was great. Excellent, simple recipe.

Orange Pork

A very good recipe. I sort of guesstimated the amounts for the sauce, but I think I added a little more sugar and oj than asked for. I also squeezed fresh juice from an orange, and then dumped the pulp right into the pan. I seasoned the pork chops with salt and pepper before frying them. I served the sauce separately with the chops because of my son's preference, but I think simmered in the sauce would have been excellent!

Roasted Butternut Squash Soup with Apples and Bacon

I loved this soup, but the rest of my family did not. I'll call it lack of taste on their part! One thing--I used a hot curry, and for that spice, the amount is too much. My mistake. However, I loved the flavor of the end product, just wished it didn't have so much kick.

This was a great starter recipe, but I also needed some guidance from another website that had step by step instructions with pictures. One thing I'm learning: you almost have to "overseason" the meat and cooking liquid, because masa has absolutely no flavor.

Grandma's Gnocchi

Mine turned out fine, but if I had followed the 3-5 minute boiling time, they wouldn't have. Mine floated to the surface after a minute, at most. Also, you have to sort of eyeball the ratio of potato to flour. Not all potatoes are the same size.
