Peanut-Ginger Chickpea Curry

My husband and I are not big chickpea fans (except hummus) so we didn't hold out much hope for enjoying this recipe. But it was surprisingly good. I boiled the chickpeas for 15 minutes to help soften them up. I'm not sure this helped, but it turned out great!

Broiled Tilapia Parmesan

Absolutely wonderful and very easy. I served it with a parmesan risotto that really complimented it. I used orange roughy instead of tilapia because I like it better than tilapia. The entire family (including my 15 and 11 year old boys) wants it to be included in the regular meal rotation. Very fast and easy, especially if you remember to thaw the fish ahead of time (which I did not).

Shrimp and Artichoke Linguine

Since so many people had an issue with the noodles, I made this with orzo pasta instead. When it was finished, I added some toasted pine nuts that really added a great bit of flavor. A little FETA cheese on top and this is now one of my favorite dishes.

Flounder Mediterranean

I can't believe I haven't already rated this one. I've been making this one for awhile and I always LOVE it. I typically don't use flounder, but instead use orange roughy, just because that's usually what I have on hand. I love topping this with a bit of feta cheese as I put in on my plate. It just adds to the whole Mediterranen feel. I love this one. Our family is divided, though. My husband is not an olive fan (and there is no way I'm skimping on those yummy kalamatas), and my youngest son is sort of picky, but my oldest son and I LOVE it. I think it would make a great sauce for pasta also.

Pita Chips

I can't seem to make enough of these suckers. They last about 10 minutes in our house and then they're gone. We love dipping them in hummus. They are my standby for when we have get togethers at our home. Totally wonderful and easy! Though, I must admit, I have never been able to find chervil, but they are fabulous even without it. Beware, you can't eat just one!

Seasoned Orzo and Black Beans

To me this was sort of bland, but the rest of the family thought it was good. We had it as a main course, but it is certainly more of a side dish. Also, I think I just have an aversion to frozen vegetables. Perhaps I would have liked it better if I had used fresh.

Cavatappi with Spinach, Garbanzo Beans, and Feta

Who would've thought that such simple ingredients could make such a tasty meal. I added two tomatoes and some basil to mine and it was simply wonderful. I also boiled the garbonzo beans as suggested and think that really works well. What more can you ask for in a recipe? It's simple, healthy, and delicious. The whole family agreed that this is a keeper. Will make again and again!

Baked Cod with Roasted Red Pepper Horseradish Sauce

I made this tonight and it was ok. I thought that the horseradish was way too powerful. The cod itself was tasty after I scraped the sauce off. My husband liked the sauce though, so perhaps it is just a matter of personal taste. It was super easy. I'll probably make this again but use less horseradish

Artichoke Spinach Lasagna

This is an absolutely wonderful lasagna! I made it for the third time last night. I also do not pre-cook my lasagna noodles and they are perfect after the dish has been baked. I used fresh baby leaf spinich instead of frozen and non-marinated artichoke hearts and probably twice the cheese (we're cheese fanatics). I'm going to try to make one ahead of time and freeze it for later to see how that works out. Thanks for the great recipe!

Marinated Grilled Shrimp

I used this marinade on mahi mahi fillets and then grilled them. It was delicious. I used balsamic vinegar in place of red wine vinegar and doubled the cayenne because we like spice. I also didn't want the added fat of the full 1/3 cup of olive oil, so I reduced it to just a drizzle and added extra tomato sauce. I definately did not miss the fat. This dish will be served again soon.

Grilled Stuffed Swordfish

This is an absolutely incredible dish. I almost skipped the stuffing, but am so glad that I didn't. It really added to the flavor and interest. I did reduce the amount of arugula by half, though, and had plenty. It was a big hit with our family. My 11 year old son asked if we could have this swordfish every night. Even my 7 year old cleaned his plate. And as a bonus, it was surprisingly easy to make. We will definitely have this again.
