Colcannon Bake

This was a HUGE hit with my family on St. Patrick's day!! The only think I changed was I browned 5 slices of bacon and cooked the cabbage\leek\onion mixture in 1 TBS of the drippings then added the crumbled bacon to the colcannon before baking. Will definitely be making this again!!

Eggs Benedict Breakfast Pizza

Very tasty recipe! I halved the recipe and used bacon and prosciutto instead of ham, and guyere instead of cheddar (it's what I had on hand) added some green onions and prebaked the crust for 7 minutes. Turned out perfectly! Will definitely be making this on a regular basis! Oh, and Pillsbury has come out with a flat sheet of cresent rolls in a perforations.... which I used for this recipe.

Apple Pie by Grandma Ople

Awesome pie! I made it this weekend and the only change I made was to add 1 TBS of cinnamon to the apples before adding them to the pie crust. Other than that I followed the recipe to a T. It was a little runny, so may add some cornstarch or extra flour next time around, but the flavor and presentation is out of this world. My new "go to" for apple pie. I won't use another recipe from now on.

These were a hit over Labor Day weekend. I didn't have fresh parsley so used a 1/4 cup of finely chopped thai basil instead. I used low fat mayo and cut the bacon to 3/4lb then trimmed all the fat before frying it up. A definite keeper!!
