Pumpkin Casserole

Easy and very good! Thought it was a little sweet so I halved the sugar (used only 1/2 cup).

Flounder Florentine

First I added 3 cups of cooked rice to the bottom of the pan & then spread the spinach (only used 1 pkg) on top. Used shallots instead of onion. Added 1 clove garlic. I increased the nutmeg to 1/4 t. I also added 1/4 cup white wine to the sauce & placed half the sauce on top of the rice/spinach & the other half on top of the fillets. Was ok, but won't make again.

Fluffy Pancakes with Wheat Germ and Applesauce

First I have to say I only had egg beaters so I don't know how much that effected the density of these. But, they were very dense and bland. I added more milk to thin them out. I ended up adding splenda, cinnamon, and vanilla and they were still kinda bland. Will not make again.

Wonderful Yogurt Cake

To make this a little healthier I used 1/4 cup butter & 1/4 cup applesauce instead of 1/2 cup butter. Also, only used 1/2 cup brown sugar instead of 1 cup. This cake was good, but won't make again.

Yogurt Whole Wheat Quick Bread

I added 1/2 t. cinnamon instead of 1/4 t. This bread was good, but I have a similar recipe that's healthier (no butter) so I won't be making this again.

Acorn Squash

I just baked in a baking pan with some water for 45 mins. and they cooked just fine. I thought there was too much butter and sugar. Next time I will try only 1/4 T. butter and 1/2 T. of brown sugar per each acorn half.

Mascarpone Substitute

I'm not sure what Mascarpone cheese is suppose to taste like (I could'nt find it at my local grocery store) but the dish I used this recipe for tasted great!

Blueberry Bread I

A little too sweet, maybe use 3/4 cup sugar instead. Could use more blueberries, maybe 1 1/2 cups. Not really moist, kinda crumbly like coffee cake. Won't make again.

Whole Wheat Banana Nut Bread

I added 1/2 t. cinnamon, 1/4 t. nutmeg & 1/8 t. ginger to give it more spice. Also, I don't know if it's just me but, if this bread doesn't get eaten within a couple of days it started to get moist on top and smells/tastes funky. Almost like it is fermenting... It has happened everytime.
