Stuffed Shells III

Reviewed: Mar. 29, 2012
Yum! I was a little worried because I had never made stuffed shells before, but this recipe was great! It fed three of us twice with enough leftovers to send to work with my husband for his lunch today! This will definitely become a regular in our house! The only change was that I didn't add the mushrooms; no reason, I just didn't want them (and yes, I like them lol) and I followed a suggestion to cover them with foil until the last 10 minutes. Then I added the rest of the cheese and broiled it until brown. Next time I will add more sauce, but that's the only change I'd make. Thanks for a keeper!

Spring Cleaning Cookies

Reviewed: Mar. 26, 2012
Love these! I'm starting to think I'm eating more dough than cookies, but they're delicious either way! I've been using my small pampered chef cookie scoop and so far have gotten five dozen and have only used about 2/3 of the dough. Lucky for me, cuz these aren't going to last long at my house! Thanks for a keeper!

Creamy Italian Chicken

Reviewed: Jan. 20, 2012
I make this recipe often and my family loves it! I mostly serve it with noodles, but it's great over rice, too! Pretty rich, but fabulous! It's good even without the mushroom pieces as well.

Slow Cooker Chicken Taco Soup

Reviewed: Dec. 7, 2011
I can't give this a true rating because I didn't have all of the ingredients, so my rating is for tonight's soup. I only used one can of the diced tomatoes with chilies. I used creamed corn instead of whole kernel (but that was fine), a large (15 oz) can of tomato sauce, and I made the Taco Seasoning that you suggested. While the soup was cooking, I was pretty convinced that I wasn't going to be happy with the results. When I tasted it, it seemed way too spicy. In an effort to cut the spice, I added some homemade chicken stock and about 1/2 cup of sour cream. However, once on the table, with saltines and shredded cheddar, the soup was perfect! Even my picky, very UN-spice-loving son raved about it! I will be making this again!

Caramelized Baked Chicken

Reviewed: Dec. 1, 2011
I made this tonight and my family loved it! I used boneless, skinless breasts instead of wings. I did make a few changes - I added more garlic, brown sugar (@ 2 tbs) and some minced onion. It was too saucy for the few breasts I had, but we really enjoyed the flavor. I will be making this again!

E-Z Drop Biscuits

Reviewed: Oct. 19, 2011
I made these last night; I didn't have baking powder, so I used self-rising flour and omitted the cream of tartar and salt. Also, I made a huge mistake. I put in 2 tablespoons of sugar instead of 2 teaspoons! I was worried the biscuits would be way too sweet, but I ended up being glad for my mistake. They were awesome! This is going to be my go-to recipe when I need some quick, easy and delicious bread!!

Bread in a Bag

Reviewed: Sep. 15, 2011
My new favorite bread recipe! I normally use a bread machine because I don't care for kneading, but I bit the bullet this time and I may not be using my machine too often now! Great tasting bread, quick, easy and fun to make! Thanks for sharing your awesome recipe!

Donut Muffins

Reviewed: Sep. 15, 2011
We love this recipe! My 11-year-old son has been begging me to let him help cook and I thought this was the perfect way to introduce him to baking. We made them last night. My husband asked for me to make another (double) batch! I reduced the nutmeg to 1/2 tsp and it was too much when they were fresh, but today, they're perfect...and they really do taste like donut holes!

Baked Ziti II

Reviewed: Aug. 23, 2011
I made this dish last night and it was a huge hit with my husband and son! I read the reviews and ended up making a few changes. I added cubed cooked chicken, used 15 oz of ricotta, two eggs and since I only had a 24 oz jar of spaghetti sauce, I added a 8 oz can of tomato sauce. Plus, I always add extra spice to spaghetti sauce, so I put in some garlic & onion powder, salt & pepper, and italian seasoning. I forgot to time the rotini pasta, so it wasn't all the way al dente and I didn't rinse it. Because I mixed everything together (except the cheese, which I put half pasta, half cheese and repeated the layers), I was a little worried that there might not be enough sauce and I might have some crispy pasta on top. However, I had nothing to worry about; it turned out absolutely perfect! It wasn't a 'pretty' dish, but very filling and tasted great! We will probably use sausage and mushrooms next time instead of chicken. The possibilities are endless! Thanks for a great recipe!
