Morning Glory Muffins I
My family loved this recipe! I love the adaptability of it, for instance, I did not have any apples on hand, but chopped up 1 cup overripe strawberries, 1/2 an orange, then added 3/4c blueberries, then the grated carrots. I also added 1/2 tsp nutmeg, 1/4 tsp of cloves, 1/2 tsp of ginger for additional spice. I used more wheat flour than white flour (I just reversed the measurements). I only used 1 cup of sugar and applesauce instead of apple butter. For the topping, I did not have wheat germ, but ground flaxseed, so I mixed flaxseed w/cinnamon and smidge of brown sugar w/the chopped walnuts! My three kids each ate 3 of these! I think next time, I will incorporate chia seeds for some added protein into the mix. Thanks for a great start to our hectic morning.

Mom's Stovetop Pork Ribs
These were so delicious! This Texas family gobbled up everything on their plates. We had guests over for dinner and they raved about how wonderful everything came out. Evidence was empty plates even after serving hefty portions. I will definitely make this again. Like other readers, I used country style pork ribs. I put the entire package about 7 pounds into a roaster, cooking atop my gas stove top, every 15 mins I would switch the roaster around the burners to create a more evenly distributed "roast". It did take a lot longer than 25 mins, but I had quite a bit to cook about 2.5 hours. It was well worth it.

Red Enchilada Sauce
After reading the reviews I used tomato paste instead of sauce and also used 1/2 can of chipotle peppers. It was way to hot for our taste buds w/the chipotle, I had to tone it down by using grated carrots. The end result was delicious!
