Delicious Black Bean Burritos

Four stars only because I added a few things. I left out jalapeno simply because I didn't have one. I added about 3/4 can of diced tomatoes with chiles undrained, about 1/2 tsp cumin and used 4 oz cream cheese. I also added shredded monterey jack cheese before I wrapped up each burrito. Fabulous Lenten meatleas meal.

Chipotle Crusted Pork Tenderloin

The only reason for 4 instead of 5 stars is because I only used 1tbs of chipotle chili powder and I also marinated in pineapple juice for a few hours before I marinated in the spice mixture for a few hours. I made pork tacos out of this recipe. They turned out fabulous!

Roasted Brussels Sprouts

Tonight was my first time cooking brussel sprouts, but not my last! This recipe was fantastic, and my 7 year old even ate them. I quartered them before preparing, which made them perfectly bite-sized. I cooked them for 20 minutes and they were perfect.

Ranch Chicken and Bacon Panini

Made these for lunch today and they were a big hit! I used the country french loaf and leftover chicken. Also, subbed American cheese because i didn't have any cheddar. Always looking for great panini recipes for my grill,l and this was it!

Fantastic recipe! Followed the recipe exactly, except used only 1/2 tbsp black pepper, and everyone loved it, including my picky 7 year old and my 3 year old who won't eat anything!

South Carolina She-Crab Soup

This was just ok for me. Even though I added a lot of Old Bay I still found this to be very bland. Probably will not make again since I do not think it is worth the price of the crab.

Chicken Pesto Paninis

This was a big hit with hubby for dinner, who's usual response to anything is "it's ok." I made my own pesto using the pesto sauce recipe from this site with slight modifications. Fantastic light dinner.

Pesto Sauce

I gave this 4 stars only because I didn't follow the recipe exactly. I used pine nuts and eyeballed the oil until it reached the consistency I like. That being said, this pesto is WONDERFUL! I used it in the chicken pesto panini recipe from this site and it was a great, light dinner.

Garlic Chicken with Orzo Noodles

I thought this was ok. I cooked the orzo in broth and added about a half tub of Philly cooking cream garlic and herb, which helped boost the flavor.

Stuffed Peppers My Way

My new favorite way to make stuffed pepperes. I didnt have any green onions so I used red. I also subbed a can of Italian style diced tomatoes, which added a lot of flavor, and threw in a couple of handfuls of spinach. If you like feta, this recipe is for you.

Mexican Corn Bread

Unlike other reviewers I did not find this recipe to come out soggy at all. It came out very dense for me. However I did find it to be very bland. It seems to be missing something in the flavor department. Sugar maybe. I cant seem to put my finger on it

Strawberry Blue Cheese Salad

Yum. Yum. Yum. Made this today and it is fabulous! Used baby spinach instead of mixed greens and for the nuts I used the sugar coated pecans recipe on this site. Used a bottled light raspberry walnut vinagrette dressing. Wonderful!

Pear and Blue Cheese Salad

I usually double the "stuff" that goes on this salad b/c I like a lot of stuff on my lettuce. The dressing is great. Well worth buying walnut oil if you don't already have it. I use the Sugar Coated Pecans recipe from this site for the nuts.

Sugar Coated Pecans

These are amazing. I give these for Christmas to co-workers and everyone always wants the recipe. I use 1/2 cp white sugar and 1/2 cp light brown sugar. I sub pure vanilla extract for the water and use 1tsp of cinnamon. I also bake 15 min longer than the recipe suggests and find it gives them a little extra crunch.

Bacon Ranch Pasta Salad

I get a request for this for every family gathering. The only things i do different than the recipe is use the whole packet of ranch seasoning rather than just 3 tblsps, and i use halved grape tomatoes instead of a large chopped one.

Clark's Quiche

This one deserves 10 stars! Make sure you pour the egg mixture into the 2 deep dish pie crusts VERY SLOWLY. There is so much wonderfulness going on that it is easy to overflow your shells. I find it helpful to take a fork and push the filling around a bit as you pour so the eggs soak all the way down. Freezes great...tastes like you made it fresh that day.

Spicy Maryland Crab Dip

Wow! So good. Used 2tsp of Old Bay plus a sprinkle on top of cheese before baking. Made for a great light dinner with a salad and a chardonnay. And to the last reviewer who said this was runny...let it sit for a couple minutes before eating and it is perfect.
