Roasted Garlic Cauliflower

I give this 5 stars without actually knowing . . . I made this because I normally don't like cauliflower, but we had a head of it from our CSA, and I thought I might find a way I like to eat it. I had to take my daughter to girl scouts, and told my husband to go ahead and eat some of it meanwhile. When I got home, it was gone. I didn't even get to taste it. So my review is based on his reaction. I didn't use a plastic bag - I don't like plastic or wasting plastic bags this way, so I just mixed in a bowl. I could have just mixed it in the pan and not had to wash a bowl. Also, I used a larger glass dish to bake it in rather than a casserole, so I could spread it out to avoid burning as others suggested. I didn't change the recipe (except I didn't have any parsley) and I didn't cover it, but I always bake for less than recommended time because our oven seems to run hot. This was very easy to make and clean up. Now if I had only gotten to try it!

Mom's Chocolate Zucchini Cookies

These were delicious. I didn't change anything. Perhaps it is more cakey than brownie because of the two eggs instead of just one, or because of not squeezing the water out of the zucchini first. I'm not sure putting zucchini in these can make them nutritious, though. That must be overweighed by the sugar and chocolate.

This recipe is perfect. I had another, which involved slicing the lemon then pounding the slices to release juices, then pouring in water. I could never figure out at what point to remove the slices because the peels would cause the lemonade to get a funny taste. Juicing the lemons first is a better option, and you can add more or less sugar depending on your taste. When I pour the lemon juice in, I pour it through a strainer to remove seeds and pulp. Simple and perfect! Just how I want lemonade to taste.

Beet and Cheddar Risotto

I would give this recipe a 5 except it does require a good bit of prep time cutting and mincing, and ALOT of stirring and standing by the pan. Other than that, excellent and not too difficult to make. Even my kids who are SUPER picky (I mean only mac n cheese or grilled cheese for them) will eat this. It is one of the very few things I can make that everyone will eat. This gets devoured at our house. I use mild cheddar, and don't add salt or pepper - I let everyone do their own salt if desired.
