Chai Buttercream Frosting

This was an "OK" recipe in my book. It was very thin, did not hold it's shape when piped from decorating bag with tip. Everyone did enjoy the flavor, but I was disappointed with the texture and consistency. I made it with yellow cupcakes, added french vanilla pudding to cake mix. Decorated with small amount of frosting and topped with a glazed walnut and a dusting of cinnamon. Might try again, depending upon request for these cupcakes again or not.

Ratatouille Bake

I made this for my vegetarian relatives and after dinner was immediately asked for the recipe. I doubled the recipe and still added an extra can of diced tomatoes. I also added some extra spices like oregano and garlic powder (in addition to the garlic in recipe)and some parmesan cheese to the veggie mixture for taste. A good easy recipe in my book!

Slow-Cooker Tex-Mex Chicken

I kept to the recipe, mostly, with the exception that I added a can of black beans. This was the first time I used my slow cooker and everyone from my husband to my mom loved it. Probably wouldn't double it again but will definitely make again for sure. Another reviewer mentioned doing this on the stove top and I will proably do that next time as it's just a matter of the meat cooking. Plus I think that browning the chicken first will keep it more moist. A keep though, for sure.

Light and Fluffy Spinach Quiche

I, like others, tweaked the recipe a bit. Substituted the mayo with fat-free Greek yogurt and used red onion as it's what I had on hand. Added salt, pepper and garlic powder, to taste. In addition, I saved a bit of the cheese to sprinkle over the top of quiche for the last 15 minutes of baking. Was super easy!

Chocolate Pound Cake

Everyone loved this who tried it. I did the 1/2 cup of cocoa as others had mentioned. I used unsalted butter and though it was lacking some depth I was looking for. Will try salted butter and see what happens. The cake is gone, I like the denseness of it but it was still light at the same time. Maybe some mini chocolate chip stirred in will give it what I was looking for. Great recipe though, simple. Will definitely make again.

Mom's Zucchini Bread

I halfed the recipe and it turns out just as well, I used the zucchini from our very first garden. Also, I replaced the oil completely with apple sauce, so the only fat in this recipe is from the eggs. Will be making this again for sure.

White Cheese Chicken Lasagna
