Cinnamon-Raisin Granola

The first time i followed the recipe exactly, though did not add the cocnut as i am not a fan. I didn't like the flavor of the cinnamon so have not added it since and i LOVE this granola. I have it with my yogurt almost every day. I have friends who keep asking me to make them some more...giving them the recipe just didn't work. I end up making 4 times the recipe most times, i just lower the temp to 325 and bake for about 5-10 mins longer. I add all types of dried fruits and nuts to it when its cooled but recently added sliced almonds to the oats (was making a 4 times recipe batch) - substituting 2-3 cups of the oats with the almonds. Put the hot mix over it and baked as usual...made it even more amazing!! Thank you Tammy!!

Cookies 'n' Creme Fudge

I made this the first and second time exactly as written and it was wonderful - i was constantly asked to make more. The third time i substituted white chocolate chips (a bit cheaper in Canada than the blocks) and it was just as good...so started getting creative as others had. Now i have used semi-sweet chips with Dulce de Leche sweetened condensed milk and toasted almonds on top, peanut butter chips and layered the fudge with marshmallows in between (like Confetti slice) and latest creation was equal amount of dark chocolate chips and semi-sweet mint chocolate chips with regular condensed milk - and it is AMAZING. I have even used low fat condensed milk (accidently) - it turned out fine if a little softer than usual but just as good. This is one of the most versatile and tasty recipes i have ever tried!! I can't wait to try other flavors of chips and condensed milk...have a can of chocolate to add to the next creation.

Roast Sticky Chicken-Rotisserie Style

I have made this recipe at least a dozen times and shared it with everyone i could think of. For the first few times i followed the exact recipe with the exception of the white pepper - something i just didn't have and never buy. The last few times i have still followed the ingrediant list minus the white pepper, but only "marinated" the chickens for a couple of hours and then baked with a lid on at 350 for 1 1/2-2 hrs. I started this short cut version when i forgot to take the ckns out in advance but still wanted the flavors. Also i don't eat the skin so i don't mind that it tends to end up not crispy - trying to eat a bit healthier. It works though the rub tends to sit a bit thick on the ckns, which is more than i like...but its worth it for the flavor!!

Rockin' Salsa

I have made this salsa 5 times, doubling it the last 4 as it was so good! I have friends that beg for jars of it, one who will eat a one litre whole jar in two days! I misread the recipe the first time i made it and bought a jalapeno pepper to put into it instead of banana peppers - i didn't want to waste all my chopping work so added half the pepper diced up and reduced the cayenne pepper to half...it was a home run! I have made it to the recipe once (just to see what the original was like) and 2 more times with the jalapeno - and the "mistake" version is my most requested but both are awesome. I have also added a mix of yellow, red and orange peppers instead of the green, added all of the sugar and replaced the yellow onion with more white and red - and it was a different flavor each time but was really good too. This is a very flexible and forgiving recipe which i know i will make over and over and over - planning my garden around it for next summer!! Thank you! Well two years later and i STILL get friends offering to buy any salsa i make. I did plant a salsa garden this year and my first doubled batch is canned and being eaten already! I added a full jalapeno and a habenaro pepper to a regular recipe and can't wait for the ones who like hot to try it. For the garlic lovers, i added a tsp of minced garlic and doubled the garlic powder to an earlier batch to give it a really strong but tasty garlic presence. I am being asked to do that again!

Old German Honey Cookies

I just made these for the first time last night, took them to work and everyone enjoyed them. My boss actually said he would have a second one...and he never has seconds! I did what others said and used 1 1/4 cup honey with a 1/2 cup of sugar...added a small dash of cinnamon and nutmeg as well. By the second batch i learned that they did better in my oven when pressed down a bit. They are great and something i will make again for sure! Thanks!
