Cookies 'n' Creme Fudge
I made this the first and second time exactly as written and it was wonderful - i was constantly asked to make more. The third time i substituted white chocolate chips (a bit cheaper in Canada than the blocks) and it was just as started getting creative as others had. Now i have used semi-sweet chips with Dulce de Leche sweetened condensed milk and toasted almonds on top, peanut butter chips and layered the fudge with marshmallows in between (like Confetti slice) and latest creation was equal amount of dark chocolate chips and semi-sweet mint chocolate chips with regular condensed milk - and it is AMAZING. I have even used low fat condensed milk (accidently) - it turned out fine if a little softer than usual but just as good. This is one of the most versatile and tasty recipes i have ever tried!! I can't wait to try other flavors of chips and condensed milk...have a can of chocolate to add to the next creation.

Roast Sticky Chicken-Rotisserie Style
I have made this recipe at least a dozen times and shared it with everyone i could think of. For the first few times i followed the exact recipe with the exception of the white pepper - something i just didn't have and never buy. The last few times i have still followed the ingrediant list minus the white pepper, but only "marinated" the chickens for a couple of hours and then baked with a lid on at 350 for 1 1/2-2 hrs. I started this short cut version when i forgot to take the ckns out in advance but still wanted the flavors. Also i don't eat the skin so i don't mind that it tends to end up not crispy - trying to eat a bit healthier. It works though the rub tends to sit a bit thick on the ckns, which is more than i like...but its worth it for the flavor!!

I hadn't made corn fritters in years, and am really glad i accidently found this recipe. They were really good - even when reheated the next day!
