Seven Ingredient Tomato Sauce
Three hours is unnecessarily long for a simple sauce like this. It will be fine in 30-45 minutes. If you cook meat in the sauce, a longer time is justified.

Basic Ham and Bean Soup
The best trick with a soup like this is to puree a couple of cups of the soup at the end to make a thicker mixture that still has plenty of whole beans.

Split Pea Soup with Rosemary
Simmering pea soup "about one hour" is a laugh. It's done when it's done, and that depends on many factors. Mine is going on two and a half hours and the peas are not yet soft. Just the way it works.
