Dinah's Baked Scallops
Perfect. For all the people who are boo-hooing about the butter, that's exactly how much they put in at a restaurant. That's why things taste so good there. You can put half on top, and serve the rest on the side. Definitely add some cayenne or a little hot sauce to the crumbs. Scallops should be seasoned with salt and pepper before rolling in crumbs. In fact, it's a lot easier to put the scallops (naked) in a baking dish, and put the crumb topping over. Also, a minute under the broiler makes it look nicer.

Spicy Chile Casserole
Came out great. Some suggestions: you can easily forego the white sauce prep by substituting Mexican crema from the grocery store. Definitely "blister" the tortillas (fry on both sides in a few drops of oil) until a little browned and puffed. The flavor and texture of the finished dish will be 100% better. I added 3 tbls. Parmesan cheese to the white sauce. Also make certain to taste the white sauce to ensure that it has enough salt and black pepper. I served with beans and rice.

My Favorite Sloppy Joes
Liquid Smoke, where have you been all my life? I made 5 times the normal amount of this recipe, so it also answered the age-old question of what to do with my honking container of Costco dried onions. Really good as is. I added sauteed onion and bell pepper, so there was something fresh in it. Also some chili powder. I'm sure that it would be just great without any alterations.
