Kale and Quinoa Salad

Love it! Followed the recipe to the letter. A healthy tasty way to make kale, and a nice refreshing "different" salad to take to an event. From the reviews, I would also echo the need to shred the kale really tiny or its too chewy. I also rubbed the dressing in with my hands after I warmed it up a little to help wilt the kale. If I were to make it for myself and not for a group, I would significantly reduce the quinoa (just adds extra carbs I don't need and it makes it more of a quinoa base not a kale base. I prefer to get my protein from a meat source, not a grain), add more garlic, and skip the currants/raisins as its my preference. However, since I hate it when people rate the recipe and then list all the ways they changed it...I still give it a 5 according to its original instructions!

Chocolate Turtle Cheesecake I

Very easy to make! I did have to make a few small substitutions based on what I had on hand, and still turned out flawless; beautiful to look at, no cracks, smooth texture. ( my changes were graham crumbs instead of wafers, I would do wafers next time as the Graham's didn't stick together well... And I had only half the Carmel's but I subbed with caramel sauce with no poor side effects, just not a visible caramel layer). I don't agree that this was too rich, as some have said. It is one of the lighter "easier to eat" cheesecakes I have made, and I think would appeal to those who aren't raving cheesecake fans since its not too thick or sticky. Wonderful cheesecake, very solid base recipe. Do what you like to topping or crust... The base recipe is top notch. *note, I always do a water bath with cheesecakes

King Cake in a Bread Machine

This was great! Very similar to king cake from New Orleans that I have had! Got rave reviews from others who also "know" what a king cake is typically like. Dough was super easy to work with and roll. Rose well, bake time of 15 min was spot on. Minor changes were I used Greek yogurt because I didn't have sour cream, and I also whipped additional cream cheese, sugar, and cinnamon filling to go with the filling printed here in this recipe because I like both fillings. Tasty, light, authentic. People loved it and I am proud of my first king cake.

N'Awlins Stuffed Bell Peppers

Bravo! Great recipe, and love that you can pretty much substitute amount/types of meat/stuffing to suit your taste. Husband LOVED it. It took some effort to prepare it all, but it was worth my time...not ALL lengthy prep meals are worth it...this was. Took advice from others and blanched the peppers so the bake time was shorter.

Gramma Brown's Corn Chowder

Loved it! I will make it again. Enjoyed knowing I had the health of some vegetables, some some "man" heartiness with thickness and the bacon (and I added diced chicken). Very filling, didn't need more than one bowl. Followed others suggestions of half and half instead of straight milk (although milk would be the healthier option). Muy bien!

Flourless Chocolate Cake I

Holy heaven in my mouth! This is like a fancy dessert I would expect to find in a very small sliver on a very small plate after a very pricy meal. However, now I can make it at home and impress guests (which is just what I did). Reviews are true, its very rich and you don't need to eat much to be quite content. You most certainly DO need to wait the day in between or overnight for it to set. It ocntinues to be just as good for a couple of days, and as it hardens in the fridge takes the consistency of the middle of a truffle. I will make this any time i need to make something special, or something gluten free. Followed the directions exactly, and it turned out flawlessly! THANK YOU!!!!! HEAVEN!

Five Spice Turkey Cheeseburgers

WOO HOO! This has become the ONLY burger recipe we ever make. Not only is turkey much healthier, but this flavor combination is fantastic. I have never had fresh ginger or been able to find 5 Spice powder (I have used powdered ginger, and other asian spices in minimal amounts) but the recipe is still wonderful, so don't decide not to try it because you don't have those ingredients on hand. The pineapple on top adds to the juicy-ness of it. Never dry, always good. We've tried different types of cheese and buns as well, always a HUGE hit!

Tuna Noodle Casserole I

Very tasty, easy, and you can easily use any type of pasta or noodle on hand that you may be trying to finish off. The major change I would make would be to definitely ADD more TUNA. The more tuna, peas, and broccoli you could add would increase the health benefit for more fat/calorie content eaters. So fast, will make again on a night I need to put dinner on the table without much time.

Cottage Cheese Chicken Enchiladas

5 thumbs up!! I'm picky about my enchilada recipes, and this one was delicious. Perfect blend of chicken and cottage cheese, not too runny or too dry. Really loved the use of red sauce instead of lesser healthy sour cream slathered on top. Was sad when my husband took the leftovers to work!

Sweet Potato, Carrot, Apple, and Red Lentil Soup

I was excited to try a fall soup with ingredients I already had on hand. However, this soup was just "meh." I followed it exactly except for vegetable broth (I used half chicken broth half water) but I don't think it would have made a difference. The cumin and chili did not blend well with the sweetness of the apples and sweet potato, in my opinion. Fed us for a night, won't make it again.

One-Pot Hamburger Adobo Dinner

Great meal! Very filling. Wasn't sure if it was just going to taste like wet meat when I first put it all in the pot, but it turned out wonderful! Very flavorful. I probably put in more vegetables and more worcestershire than it called for. Will make it again. So simply, quick, my husband devoured it all!
